Golden Rice Cakes with Sweet Potato-Ginger Sauce

My guests and I enjoyed this recipe. This was the second time I have made these rice cakes. The first time, I didn't use a food processor and simply grated the carrots and chopped the onions and peppers finely. I mashed the rice together with the vegetables. This time I used the food processor. Similar texture, and I have no preference. The amount of liquid for the rice, however, is off. The first time, I used 4 cups of water, since I "knew" 2 1/2 was far too low. My cakes were too wet. This time I followed the directions and the rice was so dry the cakes were falling apart. Next time, I will try 3 1/4 cups. The other thing I noticed was that the sauce is highly dependnet on the texture of the sweet ptotato. My first one was saucy, this time it was quite thick - more like a gravy. The thinner sauce was more appealing to the eye, but we ate all of it both times.

Bell Pepper and Lemon Salmon

Loved this recipe. I doubled it, but still cooked in foil. Next time I make 4 servings (or more) I will instead use a baking dish covered in foil. It took less than 1/2 hour to cook.

Vegetable Koftas

Great flavor. Next time, I will not soak the bread, and will use tomato sauce rather than tomato paste for the gravy. This will make it more like the restaurants serve.

Basic Indian Curry with Paneer

Very good curry recipe. I made it without the serrano peppers (my husband likes his Indian food MILD.) and added tobasco at the table to taste. I tried homemade paneer for this one - it didn't turn out well, and my paneer melted into the curry. Fabulous combination of spices, though. My husband says it's the best curry I've made so far.

Fresh Summer Fruit Salad

Wow! I had never thought of adding rhubarb to fruit salad. In fact, I'm one of those people who think fruit salad should have no dressing at all, but I've just changed my mind. The rhubarb is not very sweet, and it gives just a hnt of tartness to the fruit. Great combination!

Canadian Maple Rice Pudding

Rave reviews each time I've made it. Once I followed the recipe exactly, it was a little sweet, but not overly. (I think the arborio rice makes a difference.) The next time I was gluten-free, so substituted 1/2 cup real maple syrup for the sugar and flavoring. I prefer the maple syrup version.

Bean Casserole

My husband really liked this, and it's easy to make. I used a 7x11 casserole. I have no idea how you can fit 1/2 a pound of bread on the top, though. Next time I will try it with mashed potatoes instead of bread.

Chai Tea Mix

This tastes just like the vanilla chai at Dunkin Donuts. My own changes are to double the spices, and only put 1 cup of sugar in the recipe. It's still plenty sweet at that level.

Spinach, Red Lentil, and Bean Curry

This was fabulous. I prefer a spicier curry, but my husband lvoed this one. Next time, I will add a bit of cayenne pepper, salt, and cook the lentils a shorter time.

Magic Peanut Butter Middles

I made these in the past, and loved them. This time, I made them gluten free - using 1/2 cup each of tapioca flour, corn starch, and white rice flour. The dough comes out slightly stiffer than with wheat flour, but they got rave reviews. I may add slightly more PB to soften the dough next time I make them GF.

Mocha Decadence

Holy Cow, is this chocolatey! I made this gluten-free, substituting corn starch for flour, and extra strong coffee (4x) for the chocolate liqueur. It got raves, but you can only eat a small amount. Next time I will grease and flour the bottom of my pan. [Note: walnuts have a lot of oil in them, and there is a fine line between ground walnuts and walnut butter. You may want to add the flour to the nuts as you grind them.]

Moroccan Potato Casserole

Very tasty. The sauce tasted a little bland before I mixed it with the vegetables, so I added another 14 teaspoon cayenne. The result was too hot for my husband, and it was spicier after cooking, so I won't do that again.

Perfect Flourless Orange Cake

Fabulous cake! I'm always looking for gluten free recipes, and this one is great! Very strong orange flavor, very moist. Next time, I will NOT use navel oranges - too much rind flavor. I needed to partially cover my boiling oranges, as they float, and one little patch wasn't getting cooked.

Spicy Soup

What a great soup. I wouldn't have thought of broccoli and peanut butter together, but this really works. The pepper flakes add just the right amount of flavor. I needed a tablespoon of butter rather than a teaspoon.

Paula's Polenta with Mushroom Topping

Portobello Pot Pie

Great recipe - My husband isn't big on mushrooms, but he likes this one. Next time, I'll make sure I use a 9" deep dish pie pan (or a 10" pan) and decrease the amount of water a bit.
