Lovely Linguine

Excellent basic simple recipe to adapt to your style. Fast and easy....I cut back on the butter, added hot pepper flakes to the butter and garlic at the beginning, then added alot of parm/romano cheese. Adding the cheese made it more of a sauce. Very good flavors with the extra garlic and pepper flakes....without them it probably would need some help. A definite keeper.

Fresh Tomato Pie

With modifications, 5 stars. This can be made with any veggies, from julienned carrots, to peppers, asparagus, broccoli, etc. together with the other veggies as listed....it is better to diminish the number of tomatoes to reduce runniness. We like adding extra or different spices depending on cheeses, and definitely like jalapenos chopped for flavor. Great as is...better still with more veggies and more cheese mix and spices.

Berry Good Sandwich

The perfect bridal shower or cocktail sandwich. I made these using whole wheat bread, and spreading some cream cheese on each side, with thinly sliced strawberries in the middle. I used a large flower cutter as big as the bread, then cut them in half, assembling them in full flowers on the plate. Everyone raved, and they were the first item gone....even a toddler there with his mother loved them. A definte keeper, and perfect with cucumber sandwiches for a light sweet alternative sandwich.

Spumoni Chocolate Chip Cookies

Excellent cookie with a nice chocolate chip variation. I added both red & green maraschino cherries (more than called for), extra pistachios and green coloring for holiday appeal. They were a hit. Soft cookie, but firm with the many additives. I also made them much smaller, so I had loads of cookies. A definite holiday tray delight.

Potato and Cauliflower Casserole

Good idea...you just need to modify it to your tastes. I doubled the white sauce and added powders and spices for flavor. Always looking for a different way for cauliflower and this was great. As a vegetarian, I appreciate finding simple and tasty combinations on vegetables to make a more filling meal.

Cranberry Salad IV

Loved this...I did a variation and added grapes rather than pineapple. Everyone loved it, and we're not really marshmallow people. We liked the crunch of the berries. If I hadn't had someone with nut allergies, nuts would go in too. I doubled the recipe because we had such a large thanksgiving group. I couldn't wait to take the rest home and eat it myself. This is a simple, excellent holiday keeper.

Blueberry Raspberry Pie

Excellent taste and easy recipe. The only differences I made was to increase the berries by about 1 1/4 cup of blackberries, and doubled the dry ingredients (except i minimized the cinnamon due to our tastes). The pie was not runny at all, even though I used frozen berries we had picked earlier from our garden.

Tomato Leek Tarts

Excellent recipe. Easily adaptable to whatever cheeses you have or like. I used extra spices and fresh basil with cheddar and a blend of cheeses. I also used large tomatoes and leeks from our garden. My leeks were not large as the ones typically in the store and there was no need to pre-cook/saute. Everyone at our labor day BBQ loved it. As a vegetarian with loads of garden vegetables, I'll make this again and again, with different spices/cheeses for variety.

Spicy Baked Feta (Feta Psiti)

Excellent flavor, although on other tries I did add a bit of garlic and/or garlic powder which intensified the flavors. DO NOT make the mistake of using fat free feta; once I made it with the fat free as that was all the store had, but it failed miserably as the feta does not melt/soften. Simple and excellent recipe with few ingredients.

Spicy Kielbasa Soup

This is an excellent recipe that can be modified to taste and sides. Most people used rice, but as I had none, I added some elbows. I also used a fresh banana pepper from the garden rather than crushed red pepper. Having to make this after work, I did not use the crock pot but after cooking for an hour, after browning the meat and peppers, onion & celery, and adding the pasta at the end it worked great. Everyone loved it and asked for it again....with rice. This is a keeper and a great use of garden veggies.

Don't Chicken Out

Good basic recipe, but as others have said, it needs much more flavor. I added more vinegar, doubled the garlic and began frying the chicken with salt, pepper and cumin. I also used fresh tomatoes made into sauce...but it still needed something...I think some heat. Generally a good recipe, but not spectacular.

Creamy Vinaigrette

4 stars for simplicity and adaptability. I doubled the recipe as I had a large veggie & pasta salad, and used 2 T. mustard & 2 T. mayo. This combo was good as neither was overwhelming. I did add italian spice, because without it there was something lacking....good and basic, but not exactly what I was looking for. Great starter recipe. I've also used apple cider vinegar, which was good as well.

Peanut Butter Pie XV

Quick simple recipe that is delcious and easily adaptable to other flavors. I've also made this with mint chips and simply omitted the peanut butter. Delicious...the mint was everyone's favorite since it is different than most pies of this nature.

Cheese and Garden Vegetable Pie

Excellent, fast & easy. Versatile recipe that you can adapt to your taste preference with different spices and cheeses...and veggies. We substituted shredded parmesan for the mozzarella & added basil, oregano & garlic. Try broccoli, italian peppers or carmelized onions for a change of veggie flavor. MOST IMPORTANTLY...BAKE LONGER....at least 5 - 10 minutes to lightly brown. That will eliminate some runniness...also, just let it set for 5 - 10 minutes before you cut. It will come out great.

Strawberry Muffins

This is not one of the lightest moistest of recipes. Too dry for my taste and too dark with all of the spices. I would try again maybe and omit the spices....not sure cinnamon and nutmeg go with strawberry. I did use 1 cup of jam rather than 1/2 and it still was not enough. Got no compliments on this bread. Will probably not make it again because it is very dry...but it is easy.

Roasted Corn and Basmati Rice Salad

This is a great basic recipe that makes TONS...just modify to your taste. I even added sour cream to make it a creamy base once, and added red peppers and other veggies on hand to suit our taste. If you follow this recipe, you better want alot of salad.
