Roasted Corn and Basmati Rice Salad

This is a great basic recipe that makes TONS...just modify to your taste. I even added sour cream to make it a creamy base once, and added red peppers and other veggies on hand to suit our taste. If you follow this recipe, you better want alot of salad.

Penne in Vodka Cream

Excellent as a base recipe...but it needs some extra flavor and additional cooking time to reduce the strong vodka flavor. Do not think that this recipe will take 20 minutes....it needs significant cooking time. I added much more heavy cream and tomato as well as garlic, spices and extra cheese. Everyone raved about the recipe. Use this as your base....then modify to your taste.

Simple Arrabbiata Sauce

This is a simple,tasty recipe easily adapted to suit your personal taste. One thing that has driven me nuts are the comments on the recipe being too spicy. Arrabbiata sauce is HOT...if you don't like hot...don't make it. This is NOT for you. Also, authentic italian sauces are not thick smooth American spaghetti sauces. Quick, fresh and simple is the way it's supposed to be...hence, use fresh tomatoes if possible...Fresh is best, but canned are fine, as that's what's easiest and available, except for summer.

Tomato Crouton Casserole

Excellent and simple recipe. I used diced tomatoes from the garden to use up my vast supply. Just adjust spices to suit your needs....I added fresh basil and oregano from the garden....GREAT!

Tortellini Pesto Salad

Excellent salad. Unlike others, I wanted a more mayo based salad. I omitted the olives & vinegar and increased the mayo, because I added more veggies. I added alot more broccoli as well as some chopped vidalia onion. Wonderful base recipe to adapt to your personal preferences.

Fresh Asparagus Soup

This was excellent. Simple changes made to use what we had on hand were sour cream instead of yogurt, chicken broth rather than vegetable broth & regular milk instead of soy milk. We added extra sour cream & it was divine. Would make this for anyone. My 16 year old loved it.

Bavarian Brownies

VERY dry...good idea, but as is needs modifications to increase moistness. Extra oil helps. I also iced with German chocolate icing, so with those additions, everyone enjoyed, although still a bit dry. This recipe needs adjustment.

Fresh Asparagus and Chicken Casserole

I loved this recipe, but the rest of the family didn't like it as much. I had increased the seasonings and added significant garlic and onion powder, but it could use a little something extra. I also added sour cream for more moisture and shredded parmesan in the casserole. Also mixed it all together as others suggested. Also needs additional baking or pre-steaming/cooking of asparagus for asparagus to not be so crunchy. Overall, good...but needs many adjustments for flavor, cooking and assembly.

My family loves these and this recipe is wonderful....especially since it makes a 9X13 pan rather than an 8X8 or 9X9. I've made these for different occasions and varied the traditional colors to match the holiday or theme. You will not be disappointed. I also find that cutting the bars upside down, with the chocolate side down is MUCH easier.

Baked Asparagus with Balsamic Butter Sauce

Excellent, simple and different recipe. Everyone loved it and thought that the sauce should be used throughout the entire meal...perhaps with chicken or pork. Would be 5 stars but the baking time needs adjustment, as did doubling the balsamic. With 2T. balsamic and 1T. soy sauce, the taste was much better. A definite keeper.

Ribboned Fudge Cake

Excellent and easy. Would recommend to anyone for a quick yet impressive dessert. I used a carrot cake mix and added ground pecans to the cake. Delicious. Baked cake in a tube pan and topped with cream cheese icing.

Veggie Pizza

Excellent easily modified recipe to adapt to personal taste. Like others I changed and used what we liked: sliced black olives, red & yellow peppers, cucumbers, broccoli, onion & shredded cheese. I also used a bit of spicy ranch mix to give it a bit more flavor. Excellent recipe.

Cucumber Sandwiches I

Excellent basic idea which can be modified to taste. I used 1/2 a package of regular ranch, 1/2 of spicy ranch & the dill. Then put a bit of dill atop each cucumber. Everyone, even non-veggie lovers enjoyed this new years eve. Nice combo and very easy with few ingredients.

Spicy Bean Salsa

For simplicity, this was a good recipe, but the italian dressing in NO way goes with a salsa. This should be omitted and fresh tomatoes should be cut up for juice and cilantro added like many others stated. Tasty but not exactly with a normal salsa taste; oil and italian seasonings detract from it.

Polish Style Lasagna

Use this recipe as a base and add what you feel is best for your pierogi style. With modifications it's a 5 star. I add fried onions to the potato mixture together with some cheddar and other cheeses, (i.e. parmesan, mozzarella, etc.) Without these cheeses it is not as good and does not taste like the potato and cheese pierogi most people eat. Feel free to add sauerkraut or fried cabbage as a layer. I make this each year for Christmas eve for my Polish family together with Fried Cabbage with fried onions & a bit of sugar, and Polish Pound Cake.

Tomato-Cream Sauce for Pasta

Good and simple...a little too mild for our taste as written, but this is easily adaptable to accomodate for more heat or flavors, i.e. hot peppers, green peppers, cheese, etc. I also used fresh garden tomatoes rather than canned, so either will work. Great simple, basic recipe.

Impossible Brownie Pie

With my one modification, I give this recipe 4 stars (I'd give it 5, but this change is necessary.) As other readers complained of dryness, I added a heaping 1/2 cup of shredded zucchini. This moisture cured the dryness issue...just add about 10 minutes more baking time. Simple and delicious. I made this for a labor day gathering and everyone loved it. I wish that I made 2, because it was gone in a flash.

Peanut Butter Drops

Delicious and easy recipe. I am always looking for new zucchini recipes, especially for ones without spices, since most zucchini baking recipes have nearly the same flavor. I made these for a labor day family gathering and everyone, from kids age 7 to a picky 81 year old loved them. I highly recommend these...the only things I did differently was to use 1/2 c. butter and 1/2 c. oil as I had no shortening, & I used smooth peanut butter. Excellent. You can even add a bit more zucchini, since that just moistens the cookies further.

Dill Vinaigrette

A great variation of a siimple vinaigrette that is different than a heavy basil, tarragon, oregano type dressing. This is much better with additional fresh dill added. I've also done it with olive oil, which is great, and also with dijon mustard rather than the mustard seed. I've used this as a vinaigrette on pasta with chopped zucchini, cucumber, feta, onion, pepper and lightly cooked fresh green beans. Excellent for this pasta salad. Would give 5 stars, but to make it 5 stars, it needs the other ingredients.
