About this Cook
I am an operations supervisor for Carlson Wagonlit Travel. I love to cook, especially for my family and my team at work. I have about 25 employees and try to do regular incentives where I cook for them when they have improved their performance. One incentive was to make an entire meal for them to take home to their family for having the most improved performance. This month it's 100 cookies of their choice... I just love to cook for people!
My favorite things to cook
Since I have had gastric bypass surgery I have perfected the art of cooking sugarfree desserts. With the holidays, I wanted to make things that people could enjoy without as much guilt.
My favorite family cooking traditions
I would say is cooking for Christmas, making hundreds of cookies to give out to family and friends every December.
My cooking triumphs
Mastering the art of working with Splenda and making things taste so comparable to the sugar varieties that people ask me to make everything sugarfree.
My cooking tragedies
This season... forgetting to add the splenda to a batch of peanut butter cookies... what a waste! It rarely happens, but I hate to waste good ingredients.

Cream Cheese Squares
I LOVED this... I had to make it my own, so I made the cream cheese layer (with splenda blend) and tried variations to it by spreading a layer of either apricot, blueberry, blackberry or strawberry sugarfree preserves over the cream cheese then finishing off with the crescent dough and butter and splenda blend sprinkled on top... OMG, I had to make this 3 times in 2 days due to so many people loving it over the holidays!!! No one could guess it was sugarfree.. the fruit topping over the creamcheese really gives it kick! My fav were the blueberry ones, and the apricot... with the apricot I crushed 1/2 C of pecans and sprinkled those over the top with cinnamon and splenda blend.. that was sheer heaven. Even better the next day if thats even possible! I am thinking about trying this with a variation of no sugar, but using a packet of hidden valley ranch powder and bacon and maybe some sundried tomatoes... maybe butter and parmesan on top?... I will let you know!

Pumpkin Cookies with Penuche Frosting
OMG!! This was the best cookie recipe I have ever made! Since weight loss surgery I have worked on converting most recipes to sugarfree so I can eat them, and this recipe was no exception. I used splenda and splenda brown sugar for the replacement of sugar, in equal amounts to the recipe (splenda often recommends cutting the amt of splenda to the amt of sugar). I did leave off the icing in this recipe and created an icing that was a cream cheese based frosting, in a sugar free version, and put it in a dish on the side for an optional garnish to a wonderful cookie. This was so great I had to make another batch the next day just to have some more for the family. I also added 1/4 tsp of cloves and nutmeg to this recipe. Great flavor, cant wait to serve these cookies for Thanksgiving!

Annie's Fruit Salsa and Cinnamon Chips
HOLY SMOKES this is good stuff!!! I have made it twice this week!! I ended up using splenda brown sugar and splenda, along with sugarfree strawberry and apricot preserves to keep it sugarfree. No one can tell its a sugarfree version. This salsa is incredibly addictive! I tried several versions of chips... I used flour tortillas/corn tortillas/low carb tortillas... the best was either the flour or corn, the low carb stays too chewy... but I made a mixture of splenda brown sugar and cinnamon and sprayed the butter flavored crisco on them and they were great!!!
