Scalloped Potatoes and Onions

I'd give this 4 1/2 stars, but that's not an option. These were really tasty and easy to prepare. I love that there's no heavy cream called for in the recipe, but still you get a rich side dish without all those calories! I used a mandolin to get the potato slices nice and thin, and cut the recipe about in half using only two good-sized potatoes. I baked this in a small Dutch oven, so my potatoes were layered a bit thick, but only baked for an hour at 370 degrees. I added a bit of garlic powder and parmesan cheese to the sauce. Yummy!

Marinated Cheese

Fantastic! This was a big hit at my dinner party. I put the (low fat) cream cheese in the freezer for about two hours to make cutting it easier. Have your cheddar ready to go before preparing the cream cheese. That way you're ready to start assembling as soon as you've sliced the cream cheese (it will get soft quickly). I had some roasted red peppers on hand, so I used those in place of the pimento. I served with wheat crackers and pita chips. Yummy!

Roasted Vegetables

Really yummy and easy! I only used one red pepper, half of a red onion, and one Russet potato because it was just my husband and I. Perfect amount for the two of us! Even though I had fewer veggies, I made almost the same amount of sauce. I also added some minced garlic and a sprinkling of sea slat, and I didn't have fresh thyme so I used about 1 1/2 teaspoons dried. I'll be making this again and again with other vegetables and different herbs. Thank you Saundra!

Southwestern Grilled Chicken with Lime Butter

This was really delicious! Loved the "spread" on the chicken, and the butter sauce really accompanied it very well! I used boneless chicken breasts cooked for 12 minutes on the grill. I also used sea salt instead of regular. My husband doesn't like spicy food, so I used a jalapeno pepper instead of a serrano chile (produce guy said it was less potent) and scarped out all the seeds and membrane so there was very little "kick" in the sauce. I also used a red onion instead of white because I had some left over from another recipe. I served this with Roasted Vegetables (from this site, submitted by Saundra) which were wonderful, and even better with a little of the butter sauce on them! I think I'll use the sauce on other dishes. Yum!

Best Brownies

I've made these brownies several times because they're easy to whip up with ingredients I have on hand. I've never made the frosting, but I have thrown all kinds of treats into the batter - marshmallows, chopped chocolate truffles, butterscotch chips. Always yummy and moist! If you want a topping, just sift some powdered sugar on them (I place some in a fine-gauge strainer and shake).

Burgundy Pork Tenderloin

Very yummy! I omitted the celery and used 1 cup wine, 1 cup beef broth. There was little liquid left after baking, so I added another cup of broth to make the sauce. I also didn't need the entire packet of gray mix,so advise that you add a little at a time until desired consistency. Thank you for sharing!

Roasted Garlic Bread

This was delicious! I didn't follow the directions for preparing the garlic because I already had some on hand from another recipe, so I cannot comment on the roasting method. But the mixture used to top the bread was very tasty.

Ginger Glazed Mahi Mahi

Broiled Tilapia Parmesan

My husband grew up on the coast and knows his seafood. This is one of his all-time favorite recipes that I've made. It's really easy, too. I've used Grouper and Cod, as that's what we have locally, and always use low fat mayo. I've made it twice for company and they rave. Fantastic!!

Artichoke Salsa

Incredibly easy and so tasty! I'm not a huge olive fan so I leave those out. I've even made it when I had no artichokes and still thought it was yummy. But when making for friends, the artichokes sure add some "wow" factor. I've used both fresh and canned diced tomatoes with success. Now when I eat salsa from a jar it tastes awful to me.

Roast Sticky Chicken-Rotisserie Style

Pollo Fajitas

I've made these several times and love them! Have also made for company and always get rave reviews. I use chicken breast instead of thighs. And when I'm just about through sauteing I splash in a little more soy sauce (low sodium because this already has a good salt flavor). Wonderful!

Italian Breaded Pork Chops

I needed a recipe I could prepare quickly one night, so I gave this a shot. Turns out this is now one of my husband's favorites! I've made it several times. If I have fresh herbs on hand I add those to the breadcrumb mixture. Also, I cut back on the egg/milk mix - makes way too much. And once I also skipped roasting then discarding the garlic and didn't notice that it tasted any different. Wonderful, quick and easy recipe. Thanks for submitting!

Roasted Red Pepper and Tomato Soup

I really dislike tomato soup out of a can, but have had wonderful tomato soup in restaurants. This recipe was exactly what I was looking for! I made it for my book club and all the gals raved about it. I did make a few changes. First, I used canned diced tomatoes. I also sauted two chopped red peppers and used one roasted red pepper from a jar, putting them all in at the same time instead of reserving one for the end of the recipe. Instead of making the roux I added some cornstarch to a bit of the broth, stirred until smooth, and then mixed that into the soup. Finally, instead of the sour cream I added a few tablespoons of cream to the entire batch before serving. Wonderful!

Classy Chicken

Fabulous! Didn't change a thing (that I know of - I'm not real good about using measuring spoons) and it turned out perfect, was easy to prepare. Picky husband said it was great without me even asking how he liked it. That's when I know a recipe is a hit. Thanks for sharing!

Chicken Enchiladas I

Chicken Tequila Fettuccini

Thank you for a fantastic recipe! We loved it and will definitely be making it again. Be sure your pan isn't too hot when you add the broth, lime juice, and tequila. Mine was which resulted in scalding and burning. Easily remedied.

Easy Key Lime Pie I

Very easy and so tasty. It's been a hit with everyone I've made it for. I added a little extra lime juice because I like my key lime pie to be tangy. If you do that, cook for a few minutes longer. Excellent!
