Chicken Enchilada Soup III

I tried this tonight at the last minute - oh my goodness was it delicious. Hearty and filling, my husband raved over it, and he is very hard to please. I followed the recipe to the T and thank goodness I bought the masa flour, it wouldn't have tasted anything without that actual "enchilada" flavor. Thank you so much this is a keeper.

Stuffed Jalapenos III

This was really delicious, they flew off the plate. I also used whole slices of bacon to wrap the jalepeno, otherwise the cream cheese would melt out. I also washed them really well to make it mild. Next time I'll try some cream cheese chives or another flavor. Yummy.

Baked Potato Skins

This was so good. I also used the microwave and it cuts more than half the time. Then I add the cooked halved potatoes in the oven as followed. Only thing is I used butter instead of oil as I read somewhere that is how TGIf does it.

Yummy Garlic Croutons

Soo good and easy! I almost tried another crouton recipe but this one had one less step and is delicious. I added jalepeno powder that gave it an extra kick. Can't believe all these years I bought croutons, sounds silly to think how easy it is now.

Asian Ginger Dressing

Delicious! I followed the recipe exactly except for half sesame/half olive oil as suggested by others. But I did NOT omit the water, because I watch what I eat and the water thins out the dressing without sacrificing the taste. I can't believe I've always bought dressing when these ingredients are always in my pantry, thank you!

Honey Garlic Ribs

Whoa was this sauce sweet. I can't imagine why it has to be so incredibly sweet. We don't eat much ribs but I did find it odd that there was two-parts honey to 1-part soy sauce. Normally when I make a sauce or marinade, the recipe is ALWAYS equal parts soy sauce with either sugar or honey or some other sweet ingredient. And it always turns out perfect. We also thought it was very dry as followed. With a few changes, it def has potential to be awesome though.

April's Deviled Eggs

You have to have perfect boiled eggs for this kind of dish. Which means bringing the eggs to a boil, turn off heat, leave them in the water for 18 minutes. They're perfect every time. This had way too much mustard too.

Easy Vegetable Pot Pie

This was so simple. It literally took me 5 minutes to pop into the oven. I skipped the egg part and added some chicken. Who knew chicken pot pie could be so easy. So long Marie Calendars!

Grilled Salmon I

This gets a 5 star based on ease, simple ingredients and taste. My husband raved over it. But I have to agree the flavors mute the fish rather than enhance it. So this will be a keeper to mix it up when we don't use our go-to lemon recipe. I'll be trying it on chicken tonight.

Sukhothai Pad Thai

Wow this was so delicious. I can't believe what an easy recipe it is. I replaced soy sauce with fish sauce - I think that's really important. And I couldn't find tamarind pulp but we had the powder.. so I don't know if that is the right substitute, but the dish was fantastic. I used shrimp instead of tofu and the bean sprouts and peanuts are sooo important in adding that wonderful texture to this meal. Thanks!

Soft Oatmeal Cookies

It was hard to pick from all the other recipes out there, but I thought given its reviews I'd give this a try. Although tasty, it was missing a zing, and not gobbled up by my family as Mrs. Fields or other oatmeal cookies I've bought. So I'll still be on the lookout for a soft - but not doughy- oatmeal cookie!

Perfect Baked Potato

I tried this.. but I think I'd rather stick to baking at 350 for 1 hr. And I never need to poke holes. Mine come out perfect just as well- nice and crispy on the outside and perfect on the inside!

Spicy Stuffed Squid

Cooked rice will only expand and get mushy after baking for an hour. (Perhaps dry bread crumbs is better.) And the squid is way too chewy and inedible. Sorry but to be fair since the other reviews were the only reason I tried this recipe. We basically had to throw it out and eat leftovers. A good concept that needs a lot of tweaking - which I dare not try for fear of wasted ingredients.
