Butternut Squash Soup
This soup is easy to make and was delicious! I am going to take some other readers suggestions on reducing the cream cheese, it was very rich. Otherwise, I could not get enough of this soup. This recipe is fabulous. Thanks!!!!!

Zucchini Patties
this is a great substitute for potatoe pancakes. we really enjoyed this dish. i used a jar pasta sauce since i was pressed for time.

Korean Cucumber Salad
i loved this dish. very light. great for the summer. go light on the pepper flakes if you don't like spicy!
