I'm a stay-at-home Mom to 2 active boys. I love to cook and bake and I am finally getting to spend more time in the kitchen as they are getting older. Sometimes they join me, but usually only if there is cookie dough involved!
My favorite things to cook
Baking is a passion of mine, but I enjoy everything that involves the kitchen. Except for maybe the cleaning up part. :) It makes me feel good to feed people and see them enjoy what I have done.
My favorite family cooking traditions
I love baking cookies for friends and neighbors at Christmas. We do gingerbread men every year like my mom did with me when I was little. I have some great memories from that. We also have an annual dessert party just before Thanksgiving each year to see all of our friends before the craziness of the Holiday season. Everyone gets excited about creating a dessert to see who can win "The Belt of Sweet Victory", which of course is a $9.99 faux wrestling belt!
My cooking triumphs
I was proud when my husband told me that my cooking was better than his Grandma's, which was something I thought I would never hear. Another time, I was really honored when a crowd of people at a party we went to told me I needed to open my own bake shop. I smiled the whole car ride home.
My cooking tragedies
I baked a cake for a bake sale when I was younger and dropped the cake onto the pebbled driveway as I was getting out of the car. That stunk! Other than a few underbaked cakes, I think I've been pretty lucky. There are bound to be plenty of more mess ups, though!

Sugar Cookie Icing
Used this for sime Easter Sugar Cookies and I really liked it. It was easy and it tasted pretty darned good. The kids really enjoyed it. I thinned out with a bit of extra milk and it worked like a charm.

Apricot Chicken I
Who knew that these ingredients together could make a tasty dish? I couldn't find Russian dressing, so I used Thousand Island, which I beleive is the same thing. Also, I only used 3 very LARGE boneless, skinless breasts and a single envelope of the onion soup mix. It was a good dinner and I served the chicken over some egg noodles along with some broccoli. We will definitely be doing this one again.

Butterscotch Gingerbread Cookies
These were terrific. Yes, they are on the sweet side, and you probably don't have to add the entire bag of butterscotch chips to the dough. I liked the balance of sweet and spicy, though. I only used 1/2 tsp of the cloves, but I think it would be fine with the full 3/4 tsp. I'm glad I have these in the freezer. Yummy!
