I used to think I was a cook until I had kids. Lately all I do is put edible meals on the table! Now they are getting older, I have more time to cook.

I love breakfast foods like stratas and potato casseroles.
My cooking tragedies
Rice pudding. when I was 10, my sister and I tried to make rice pudding for my parents while they were bowling. But we didn't have enough sugar, so we opened up enough of my mom's Equal packets to make 1 cup (for one cup of sugar!). And we didn't read that the rice had to be cooked. So when it came out and we gave my dad some, he took one bite, spit it out and said "Good lord what is this ?" Ever since then it's been a family joke. He even got me instant rice pudding for my 25th birthday.

Rempel Family Meatloaf
I love this recipe...super yummy. My changes were that I only used 1 pound of lean ground beef and then finely shredded yellow zucchini (squeezed out) to it to make up for the meat. My kids asked what it was and I told them it was shredded cheese (couldnt do that with green though). also, I used whole wheat Ritz. Yummy...now my go to meatloaf recipe.

Tortilla Casserole
This was so yummy! I brought it to MOPS this morning and got a few compliments. I used red onion instead of green onion and I added Jimmy Dean reduced fat cheese. It's hearty enough to serve for dinner too.
