After-Thanksgiving Turkey Soup

This was delicious! For those of you who live in the NYC vicinity and have gone to a local Diner on Sundays for Cream of Turkey Soup, this is just like that! I've been looking for a recipe like this for forever! Extremely thick, more like porridge than soup. Did change up a few things based on what I had on hand. I was already making turkey stock from the carcass and had onions & carrots in there, strained it when done and so I used that and then used brown rice instead of white & I omitted the bouillon. I added salt & pepper without really measuring, just did to taste. Just make sure you cook till the rice is done, nobody wants to crunch on uncooked rice!

Venison Meat Loaf

Followed the directions exactly and found it so-so at best. Family wasn't thrilled either. Won't be making this again. We like venison so that wasn't the issue. The recipe was pretty bland. Not awful, but no-one wants the leftovers for lunch tomorrow either.

Whipped Cream

Perfect and easy. It's a quick and easy way to make any dessert fabulous. I use it frequently with strawberries and store-bought angel food cake for a dessert that is simple & elegant and everyone loves it. You can use this to take any dessert up a notch without spending all afternoon in the kitchen.

Onion Roasted Sweet Potatoes

Scrumptious!!! The whole family loved this and it was easy! I cooked it part way in the microwave because I didn't have enough time for it to stay in the oven for an hour, I popped it in the oven for about 15 min when the micro was done and it crisped up wonderfully. Thank you, I never in a million years would have thought to put onion soup & sweet potato together.... YUM!

Vanilla Ice Cream V

This ice cream was really good. It was easy to throw together on a moment's notice and we all liked it alot. I think I may try using vanilla bean next time in addition to the vanilla extract to bump up the flavor a bit. When I received my ice cream maker I wasn't aware that so many recipes needed eggs and cooking etc. I'm glad to find a recipe that doesn't need all that complicated stuff to taste good!

Best Spanish Rice

Yum! The only alteration I made was to use brown rice since I stopped using white rice (and white flour) a long time ago for the health benefits. Simply delicious using everyday ingredients I usually have on hand. I made this to go alongside of Whit's Chicken Enchiladas (which were yummy too) and it was a wonderful meal. Thanks!

My kids & I thought this was delicious! I had never made anything quite like it before and was concerned but everyone gobbled it up! I made the Best Spanish Rice from this site alongside and it was great too. The only shortcut I took was to use canned chicken as I was running too late to cook up the chicken breasts and I'm quite sure it will be even better with fresh chicken. Yummy Thanks!

Beef Tenderloin With Roasted Shallots

THANK YOU! This was the best roast I have ever made hands down. I had to substitute the port because I didn't have any on hand and didn't have time to go get some, I had a bottle of Concorde which is a very sweet syrupy red wine and used that instead. Other than that I did not change a thing. I can't wait to try this with the port as written! I will be making this one again & again for all kinds of occasions. AWESOME!

Pasta and Beans

I used this recipe as a springboard to use some ingredients I had on-hand when I returned home late one day and didn't have time to make the roast I had planned for dinner. I used 1 can canellini beans, 1 lg can diced tomatoes, 1 onion and a box of penne rigati pasta. I threw in some basil and garlic powder while it was cooking. My family enjoyed it but we agreed it was missing something, not sure what but I'll be playing around with this one again just because it was so quick, easy & fairly healthy I would assume. All in all, it saved the evening and we have enough left over for hubby to take for lunch tomorrow too. Thanks a bunch for the recipe!

Parmesan Chicken II

This was really awesome! I did mix the parm cheese with seasoned breadcrumbs and dipped the chicken in egg mixed with half&half (basically because that's what I had on hand). I had a bunch of teenagers converge on my house for dinner tonite & didn't know what I was going to make! This was a hit with everyone from my 8yo to my 20yo and all in between! Served it with some garlic toast & buttered veges and a great meal was had by all. Thanks!!

Chicken Soup I

I didn't have any leek on hand and completely forgot to put in the onion and I used carcasses from whole roasted chickens that I had stockpiled in the deep-freezer. It came out great. I had never used parsnips or turnips before and find I like them! This is a keeper! Thanks!

Banana Bread - Quick Bread for Machines

This is a great recipe to use up bananas that are getting too ripe, the ones I used were too squishy to cut in half so I just squished them and threw it in like that. I also added an extra banana as I happened to have 3 on hand. It worked great in my bread machine and I have a Panasonic. Everyone loved how it tasted, especially toasted with some butter for breakfast! Definately a keeper for us! THANKS!!

Best Beef Dip Ever

This was awesome! Easy, inexpensive, and yummy! I made it as written except for adding a bit more garlic (I add more garlic to just about everything!)and I use low sodium soy sauce so I didn't have a problem with it being too salty. THe first nite we had it on steak rolls with melted provolone and it was scrumptious! The kids had fun dipping their sandwiches in the gravy, They made a bit of a mess but it was fun and they ate it all up with a nice big salad and some home-made lemonade. The next nite I made up a big pot of brown rice and we ate it over that and it was a big hit again; and it also was a bit better I think because I was able to take the fat off the top before I heated everything up. Thanks for a great easy recipe, this will be a staple in our home from now on!

Summer Style Chicken

Excellent! I had to make a few changes to fit what I had on hand but it came out great all the same. I used only zucchini and a can of crushed tomatoes and added some oregano for flavor. Basically it tastes somewhat like a cross between chicken parm & cacciatore. Good & simple to make, everyone enjoyed it. This one's a keeper!
