Coconut Smore Cookies

Very good and different. My husband liked how the coconut cut the sweetness.I used 1 cup semi-sweet chips and 1 cup milk chocolate chips because that's what I had on hand. They baked golden brown and are a great twist on regular chocolate chips cookies.

We love this for dinner, it freezes well since it's a lot for the 2 of us. My cooking time is about 20 mins. longer than this recipe says, it is very delicious and filling!

Onions Baked with Rosemary and Cream

So yummy, made them for Mother's Day bbq, served with bbq chicken, everyone loved them. I cooked the onions probably 45-1 hour longer than the recipe says, I wanted to make sure they were tender. I did cover them the first 30 mins too, not sure if that increased the cooking time. They are well worth it, very different and a hit at the bbq!

Pistachio Nut Bundt Cake

I made this cake for Christmas in my new festival bundt pan and it was a big hit! I added halved cherries and then drizzled melted vanilla frosting over the top of the cake. It looked so beautful for Christmas and everyone loved the brown sugar/cinnamon middle. This is new my holiday cake for sure!

Brisket with BBQ Sauce

This recipe is so yummy! I marinated mine overnight in a soy marinade (Moore's) until I could get to the store to get the liquid smoke in the morning. I then added the liquid smoke, marinated for more hours and put it in the oven. My husband's friend just asked for the recipe because he said I've outdone myself this time. Try it!

Fortune Cookies I

It took me 2 times to get this down, but now it's so easy! Here are my tips: try adding a little almond extract (maybe other extracts like lemon would be good too) in addition to the vanilla for a little pizzazz, turn the cookie sheet over and place the dough on that side to bake, work fast when they come out of the oven, quickly fold, shape it and place 2 in a muffin tin to hold the shape. I found the step with the measuring cup too time consuming the first time and my cookies cooled off. Once you get the pattern, it's a cinch! I can't wait for my guests to discover our wedding announcement "fortunes" at my wedding on April 7th!
