Sweet Potato Pie I

DE-LICIOUS! First time making Sweet Potato Pie and this recipe is really fantastic! The only change I made was to the sugar - I used 1/2 white and 1/2 brown. And, it took much, much longer than 55-60 minutes to bake it. I had to bake mine for 1 hour 45 minutes in order for it to come out right.

Yellow Squash

This was really good! A nice twist on plain old yellow squash. I would suggest that if you do not like things spicy, do not add the jalapeno. I love spiciness but it really adds a lot of heat and distracts from the rest of the flavors. The combination of the squash, bacon and onion was very tasty on its own without the jalapeno. Will definitely be making this again. Thanks for sharing.

Delicious Ham and Potato Soup

DELICIOUS! The only changes I made were I did not peel the potatoes (the skin is the tastiest part!) and used sliced carrots instead of celery. After adding the milk mixture to the soup, I used my hand blender to blend it just enough where I still had some chunks of potato and carrot but enough to give it a creamier consistancy. So, so good! Will be making this again and again. Thanks for sharing.

Easy Batter Fruit Cobbler

Good! The end result is not very cobbler-like in its consistency (more cake like) but is very tasty, especially with some Cool Whip on the side. I used a mixture of peaches, strawberries (sliced) and blueberries (all fresh, not frozen). I also sprinkled brown sugar on top instead of white. I baked mine for 55 minutes in a 8x8 pan. Will make again - thanks for sharing.

Chocolate Banana Cake

Delicious! I used dark chocolate cake mix instead as that's what I had on hand. Batter was extremely thick, almost glue-like, when I tried to pour it into the pan. I baked mine in a greased/floured Bundt pan instead of a 9x13 pan for 35 minutes. I loved it - will be making this again.

Jamaican Oxtail with Broad Beans

WOW! Flavorful and delicious! The only changes I made were using a few dashes of scotch bonnet pepper hot sauce (didn't have a pepper on hand) and I used dried thyme instead of fresh. When cooking the oxtail in the pan, make sure there are no onions, etc. with it otherwise the onions will burn. Instead of a pressure cooker, I cooked everything in my slow cooker on high for 6 hours - the meat was falling off the bone! Simply tender and delicious. I would omit the beans next time I make this - just didn't need it. I served them over hot cooked rice. Will DEFINITELY be making this delicious meal again and again!

Easy Olive Martini Chicken

DELICIOUS! With the exception of S&P, I doubled the rest of the ingredients. I kept a lid on it while the chicken was cooking to lock in moisture - I made it before without and it came out a little dry/overcooked. Extremely flavorful and easy - will be making this again. Thanks!

The Old Boy's Strawberry Pie

ABSOLUTELY DELICIOUS! I chopped the strawberries up (recipe gave me the impression that they remained whole) and followed recipe as is. Tart and sweet at the same time - perfection! Will definitely be making this again!!

Oat Crusted Fish

DELICIOUS! Easy to make, too! Cook fish over medium heat - medium/high cooks it too fast. I used olive oil instead of vegetable oil. I seasoned the fish with salt, pepper and garlic powder before coating in flour - makes it much more flavorful. Will definitely be making this again. Thanks for sharing.

Juicy Roasted Chicken

DELICIOUS! This is officially my favorite go-to chicken recipe. I place the chicken breast-side down so it stays even juicier. I do not measure the onion powder - I sprinkle it liberally all over. I do not include celery due to personal taste preferences. You will not be disappointed! Thanks for sharing.

DELICIOUS! I baked mine for 9 minutes and they came out perfect. I would skip the confectioner's sugar next time as I don't think they need it. Soft, chewy and awesome! Will definitely be making again.

Slow Cooker Sweet and Sour Kielbasa

DELICIOUS! Half the amount of ketchup as half is plenty. I slow-cooked this for almost 5 hours. I served it over hot rice. It tasted like General Tso's kielbasa! Will definitely be making this again.

Brussels Sprouts with Mushrooms

This was really good! I used olive oil instead of butter and steamed the brussels sprouts instead of boiling them until they were fork tender (about 7-8 minutes). I also used sliced mushrooms instead of whole. Very tasty! Will definitely be making this again.

Garbanzo Stir-Fry

I was a bit disappointed with this one. Came out very bland. Definitely needs salt or some shredded cheddar or mozzarella sprinkled on top. Seems like it was missing something. However, was easy and quick to throw together and quite healthy.

Salmon Tango

DELICIOUS! I used olive oil in place of butter. We grilled it on foil first and then directly on the grill for another minute on each side to get that "grill" flavor onto it. This came out so tasty and juicy. This might be my new fave salmon recipe! Thanks for sharing. Will definitely be making this again.

Kickin' Collard Greens

DELICIOUS! I omitted the red pepper flakes and used regular black pepper (same amount as salt) but it came out too peppery - had a bit of a bite to it. I will use black pepper again but suggest using less. I also used turkey bacon instead of regular bacon. This was outstanding! Will definitely be making this again - thanks for sharing.

Perfect Apple Pie

DELICIOUS! I usually forgo making the crust and buy the ready-made roll out type and it works just as well. I also use a combination of different apples and slice them thin. Make sure you let the pie sit for a few hours after removing it from the oven - has a tendancy to be a bit watery inside if you don't let it sit long enough. I love this recipe and make it often. Yum!

Oven Roasted Potatoes

DELICIOUS! What a fast and easy side dish to make. The only change I make is I do not peel the potatoes as the skin really makes a big difference tastewise when it is left on. Sometimes I also sprinkle in some grated parmesan cheese. I cook them for 30 minutes, tossing them every 10. I make this at least once a week and will continue to do so. Yum!

Cola Pork Chops

Was a bit disappointed with this one. Cooked it as per recipe. When removed from oven, the chops are saucy on top but are sauceless and watery on the bottom. Probably will not make again since there are so many better pork recipes out there.

Carroty Rice

Not bad. I used instant rice and added some butter to the water for flavor. I also cooked the carrots with the rice; the raw carrots in the cooked rice didn't work for me. A good recipe to get some veggies in.
