About this Cook
I am married (10 years) to a man who is now a professor of accounting at a university and we have four boys, ages 9, 6, 4 & 10 months. I am a homemaker and keep very busy with all these boys! I love to bake and cook. I have recently lost 33 pounds (have 27 more to go!) doing the Biggest Loser Online and am enjoying it. I like finding recipes that sound good and making them more healthy or low-fat.

Gingerbread Pancakes
I changed the flour to white whole wheat, used Egg Beaters With a Touch of Yolk (1/2 cup) and think the cloves is a bit much. I only made 1/2 a recipe and would suggest only about 1/4 t. cloves. The pancakes are good, but the cloves taste is too strong. Still--good. The kids had fun with chocolate chips and I put maple syrup and some more chopped hazelnuts on mine. Yum!

Pumpkin Chip Cupcakes
These are so freakin' good! I was looking for a lighter type cupcake for my son's Halloween party at school where they still want "healthier" treats. I love that these have no refined sugar! (minus the icing) I thought they wouldn't be sweet enough without sugar, but they are delicious and so moist and just what I was looking for. After icing them, I put a chocolate eyeball on top for a little "scary" decoration. Love these!

Fruit 'N' Nut Tossed Salad
This salad is quite yummy because my husband doesn't like fruit in his salad and I was really craving it, so I loved it. I threw a few sugar snap peas in and used segement of an actual orange as I was out of mandarin oranges. I also threw in a few Craisins. The only change I would make is to use A LOT less sugar next time. While good, it was TOO sweet. I guess it just depends on taste. BUT yum for the fruit salad I was craving!
