Red Pepper Soup

Excellent soup! Note - don't put boiling hot soup in a blender with a plastic lid. It will explode. Ouch. Regardless, the soup was phenomenal and we added a dollop of sour cream and some cilantro upon serving. I also added cayenne pepper and a dash of thyme. I plan on making it again tomorrow!

Beer Bread I

AMAZING for something so easy to make! The top got a little TOO crunchy and the bread is hard to cut into but the inside is worth it! Add extra sugar!

Almond Shortbread I

I REALLY wish I had read the reviews FIRST. Like others, my dough was crumbly and just had NO HOPE of rolling out. So I pushed it down into a 9x13 pan and baked it like a crust. I'll probably just melt some chocolate over it or something.

Spinach Cheese Manicotti

I didn't use garlic powder, I used four cloves of finely minced garlic and added it to the ricotta mixture. I was concerned the noodles wouldn't get done because it didn't call for them to be boiled first, but they were great! The only thing I would do different next time - saute the onions and garlic in olive oil for a few minutes before adding it to the ricotta mixture. (We told my son that the green stuff was parsley, not spinach, and he fell for it.) For the side I bought a loaf of italian bread, split it lengthwise and laid the loaves crust-side-down on a cookie sheet. Then I "generously" spread softened butter on each loaf, followed by a sprinkling of garlic powder and salt. Baked the bread at 350 for a few minutes, long enough to let the butter get melty, then turned on the broiler. (Thanks Pioneer Woman!)

Saltine Toffee

This is shockingly good! I used white chocolate chips and they wouldn't melt in the oven so I ended up with chunks of white chocolate on top, then I drizzled with milk chocolate candy coating... excellent!!!!!! My kids are going nuts over it!

Mom's Zucchini Bread

Wow!!!! I don't know that I've ever made something so perfect! I took the advice of some other reviewers and made the following changes: Used 1 cup brown sugar and 1 cup of sugar and I added 3 cups of finely shredded zucchini without wringing out the water. This turned out so divine that I'm going to make several more loaves today and give them out! My husband said, "Your zucchini bread is PERFECTION." :)

Blueberry Dump Cake

This is DELICIOUS and REALLY EASY. Tastes fantastic with whipped cream! I had a bunch of blueberries I needed to use before they went bad and I decided to try this recipe since it was new for me. I did use a little bit more butter and a tiny bit less sugar. I also only had 2 1/2 cups of blueberries and it still turned out fine! Superb, will make again and again!

Mexican Casserole

This was pretty good... one kid thought the corn didn't belong, two complained about the black beans, and the husband complained that a good mexican casserole needs ground beef and refried beans. So there you go. I thought it was a good quick fix and served it with Mexican rice.

Hash Brown Casserole II

Awesome recipe - makes enough for two nights for this large family. I didn't have a 3 quart casserole dish so I used a 9x13 pan. You can halve the recipe and make it in an 8x8 square pan if you need to. I also didn't have cornflakes, so I toasted two cups of panko bread crumbs in 1/4 cup of butter for the topping. I also added some smoked paprika and garlic salt to the potato mixture. DELICIOUS! Will definitely make again.

Caramelized Baked Chicken

YUM! This was awesome! I only had 1/4 cup of soy sauce left but I made it anyway and it was GREAT. I also used two cloves of minced garlic instead of one. DEFINITE keeper - this one is going into rotation. :)

Buffalo Chicken Dip

This is absolutely amazing. I have made it a few times and I prefer it with bleu cheese dressing instead of ranch. But it's excellent either way - I had to use buttermilk ranch this last time and it turned out fantastic! I half the recipe when it's just me and the hubby wanting some munchies for late night TV. GREAT with chicken-in-a-biscuit crackers!!!

Slow Cooker Chicken and Dumplings

This recipe is fantastic! My variations: I use one can of chicken broth to cover instead of water. Sometimes I will add a chopped garlic clove and smoky paprika. You can use cream of chicken and cream of celery or cream of mushroom, whatever is on hand. Turns out great regardless. I always use the Grand's buttermilk biscuit dough and cut them into quarters. You definitely need more cooking time for the dumplings. I have also added a bag of frozen peas and carrots about an hour before serving. This recipe is very versatile! Thanks for sharing it!
