Greek Penne and Chicken
My husband found this recipe and we made it this evening. It's pretty good. We followed a few of the suggestions - we used a can of diced tomatoes plus we still added a chopped tomato. We also at the last minute added a can of tomato sauce - we needed more sauce. We also used a Rotini pasta and only used 12 ounces instead of 16 ounces. It came out pretty good. We may try some kalamata olives next time along with artichokes that are marinated instead of in water. All in all though - very good - I used all of the lemon it called for and didn't feel it was too much - I thought it actually gave it nice light flavor for summer. It's a keeper. Quick, easy and good!

Grilled Tuna
I have made this once before - the first time we had tuna steaks. Very simple, yet very flavorful. I will be making this again tomorrow. We love it. I just throw the steaks on our gas grill and they come out perfect. I also add a little garlic powder when I am seasoning with salt and pepper. Very yummy. There are never any leftovers.

Coconut Cake III
I made this coconut cake for my Bunco group last night. The ladies loved it! I made it as the recipe says, however, I substituted pecans for the walnuts. I love pecans. Even the ladies who said they typically didn't care for sweets - loved it! Didn't have alot left over. I will definitely make this again. Oh, and the toasted coconut on top - YUMMY!
