About this Cook
I am a new mom and so I stay at home to take care of the baby and the house. That means lots of time to go to the grocery store and search for specialty items or foods. I am fascinated by all the different ways to cook foods, and the really cool kitchen gadgets that I'd love to own. I love learning new things, but easy recipes that taste great are the best. I don't mind spending time making food taste good.
My favorite things to cook
Tacos with homemade salsa. Tastes so good, and I just can't get enough. I also really enjoy venturing into the world of stir fry. Chicken Vicious and Chicken Honey Nut Stir Fry are both awesome!
My favorite family cooking traditions
Since my husband's career doesn't always allow us to go home for the holidays, my favorite tradition has become our Thanksgiving meal. I cook up the whole Thanksgiving dinner including only the foods that the two of us enjoy, turkey included, on whatever day he can be home to celebrate.

My cooking tragedies
Usually any baking recipes. I prefer to cook meals instead of bake breads or cookies or whatnot. I just can't seem to get them to come out right.

Italian Chicken with Garlic and Lemon
I love this recipe! I use boneless, skinless chicken breasts cut in half that I marinade in the sauce combo (Minus the oil) before baking. As other reviewers have said it is best to pile the potatoes on top so they don't get soggy. I also use baby red potatoes with this, their bitterness paired with the vinegar really works for me. The only reason I gave it four stars is because my husband complains about the vinegar smell EVERY time I make this. He thinks something electrical is burning.

Chicken Vicious
I have been meaning to make this recipe for a long time, and I am so glad I finally did! Don't let the "Vicious" scare you, this recipe is fabulous! I did modify it just slightly for personal tastes, as we all should, but only minimally: 1/2 Tbsp red pepper flakes, and only 1 cup white vinegar. The vinegar/soy sauce combo is outstanding! The sugar does a great job of sweetening the sauce as well. My husband doesn't like peas and so, to add some crunch with the chicken and mushrooms, I added sliced celery instead. Superb! I think next time I will use more chicken, we both were left wanting more after the meat was gone!

Easy Pancakes
This recipe turned out great. I followed other reviewers advice and cut the baking powder in half. I also added 1 tsp of vanilla, 1Tbsp of lemon juice alont with some orange zest and some chopped macadamia nuts. YUMMY!!! Loved the texture the nuts added without the overly bitter nut taste. Definitely a keeper as it is so versatile. My husband has put in a request for me to add apples instead of nuts.
