YUM!!!!! This was wonderful. If I may make a suggestion, the salsa MUST be fresh. If you can find it there is a great brand Herdes that makes AMAZING salsa, they use all natural ingredients and no preservatives, the salsa actually tastes like homemade Mexican salsa. This was yummy.

Vietnamese Fresh Spring Rolls

I make this again and again. I find it a bit strong with the mint and basil. If I use basil I use a small amount and I slice it thin. I marinade the shrimp in garlic, a drop of sesame oil and lemon juice before I cook them. When I cook the shrimp I steam it in a steamer. This is always a hit at every party. Thanks for the recipe.

Very yummy, but somewhat sweet. I think it needs some spice for balance. Perhaps Ill add chilli flakes or use a stronger curry next time.

Cheddar, Baby Leek and Tomato Sandwich

Much too rich, decrease the cheese and use less leaks for sure, sauteing the leaks in butter first helps soften them but it makes for an even richer sandwich with the addition of even more butter. I dont think ill make this again. My boyfriend liked it ok. We added turkey lunch meat.

I love rich food. This tasted rich but it was a bit much for me. I wasn't too much of a fan, which is weird because I love all the ingredients. My boyfriend liked it but I didn't. I don't think Ill make it again.

Portobello Mushroom Burgers

Fantastic! My boyfriend was kind of put off at first when he heard we were having mushroom burgers, one bite and he was hooked. I served mine on a cheese bun, with avocado, sautéed onions. I also made some garlic mayo with a bit of cumin in it. I served it with home-fries and we dipped the fries into the mayo as well... yummy!

Chicken Pot Pie IX

AMAZING! I too made a couple minor changes. Instead of boiling the peas, carrots, celery and chicken in water I boiled it in chicken broth and WHITE WINE, I also added fresh garlic. Then in the second step I added some mushrooms chopped up small enough so my boyfriend didnt notice (he hates mushrooms) to the onion. I mixed the gravy with the chicken and veggie mix before I added it to the pie crust. I had lots of filling left over so I froze it. There is enough for two portions so I will put it in individual ramikins and will use puff pastry instead of tenderflake premade crusts. YUMMY!

Beef Bourguignon I

This is a great recipe. After I add the mushrooms and its just about finished I spoon single servings into a medium size ramekin (one per person ) and place flakey puff pastry over top and bake it for an additional 10-15 or until the pastry is golden. This is by far the best way to eat it, with a side of green salad. YUMMY! I have made this dish 5 times now. My boyfriend loves it and guests are always impressed. I always make about 10 servings and freeze the rest, then its a quick elegant dinner all you have to do is defrost it scoop it into a ramekin thaw more puff pastry shove it in the oven and serve it up. WONDERFUL!

If I could choose no stars I would. I am a huge fan of all the ingredients in this recipe, however, combined is TERRIBLE! It looks pretty but tastes awful. It takes wayyyyy to long to make. This was a huge d disappointment, my boyfriend was not impressed either.

Potato and Cheese Frittata

This recipe was great! It allowed clean up time which is important to me. With most breakfasts, Im racing around the kitchen creating a greasy mess. I made a couple changes and added some left over kabassa meat. Instead of using baked potatoes, I shreaded some with a grater and fryed them with onion and chive. I also added fresh parsley and it was FANTASTIC!

Fresh Spring Rolls With Thai Dipping Sauce

I love the freshness of this dish, however I changed a few things. I used mixed greens instead of regular lettuce which added great color to it. I also maranated then steamed the shrimp. The maranade is simple, I used lemon juice and garlic with a smidgin of olive oil. I then took my steamer and steamed the raw shrimp till the shells were pink, around 5 min. Instead of the dipping sauce which I wasn't fond of I used hoisen sause with crushed peanuts on top. WAYYYY better. Also for added spice I had a side of crushed chili sause.
