Boneless Pork Loin Roast with Herbed Pepper Rub
My husband loves anything peppered. Me, not so much. But with the blend of pepper and herbs this was amazing! Prepared it just as posted, but something was off with the timing. It took WAY longer than the stated amount of time. Could be something to do with the fact that I had a semi-boneless? Or is the 150 degree internal temp. correct? We'll figure it out, though, because we loved it! We will probaby add more garlic next time, too, because we love garlic!

Italian Spaghetti Sauce with Meatballs
My husband likes Italian sausage in spaghetti, so I usually cut them into meatball sized pieces, brown and add to the sauce. I decided to try something different so my 14 yo son could have some meat, too (he won't eat the sausage). It was such a big hit with everyone! My husband ate the leftovers on ciabatta bread the next day for lunch and said they were even better the 2nd day. (This rating is only for the meatballs. I didn't use the sauce recipe, as my son won't eat anything with even a tiny piece of tomato in it.)

Ultimate Shrimp Scampi
My husband and I enjoyed this so much we made it two weekends in a row! We didn't have avocado the first week, so tried it with the next. The asiago and avocado make such an amazing difference. We've never had asiago and my husband is not a fan of avocado, but we won't make it without, now. I even took leftovers to work the next day and added the two on top and it was just as good. This is our only scampi recipe from now on! FYI, it is wonderful with whole wheat angel hair pasta.
