Stuffed Shells III

This was delicious! I did follow the advice of a lot of people and added a little spinach, garlic, oregano and basil to the cheese filling. Also added another 1/2 jar of sauce to the bottom of the pans. I split the dish into 2 8x8's so I could freeze one for another meal.

Deep Fried Jalapeno Slices

I was out of beer, so I just dropped a handful of jalapeno slices (drained, from a jar) into egg and water. In a separate container, I shook them up in the flour and seasonings, then pan-fried till golden brown and crispy. We like to put them on burgers, in breakfast burritos, and regular burritos.

Heavenly Potatoes and Ham

We thought this was only ok. I did use only half the potatoes and cut them up in reasonable sizes. I put 2 cups of chopped ham in it, but it definately could've used more. I also think it calls for way too many bread crumbs on top, and an addition of either fresh mushrooms and/or chopped hard-boiled eggs could have improved this dish.

This was SO good!! I did add the sugar and 2 cups of gingerale. I think it would be fine without the sugar, too. The men didn't want any, thank goodness because my mother and I polished off the whole thing!

Authentic Cincinnati Chili

My husband and I have seen this Chili on a couple of different TV shows and were really looking forward to trying this. I stuck to the recipe exactly, except used ground instead of whole spices as someone else suggested. I served it over spaghetti with cheddar cheese, and the next day on hotdogs. This seems to be an acquired taste, as we didn't care for it at first. It was after several bites and a few good shakes of hot sauce that we decided we liked it, just didn't love it. :(

Brandy Flamed Peppercorn Steak

This was to die for! I didn't have any brandy though, so took the advice of another reviewer and used some Jim Beam - also didn't have shallots, so I just used a little extra green onions. The sauce was just excellent and wish I had doubled it - I just can't say enough good things about this. If I have it, I'll try it with the brandy next time, but it's hard to imagine it being any better - thanks!

This was very good, but had to sprinkle cinnamon and sugar on top, then maple syrup to taste better. I may try this again, with the powdered sugar instead.

Zucchini Pie

I love this quiche - but I shred the zucchini, versus dicing it, and I add a heaping 1/2 cup of shredded cheddar to it, too. I reluctantly used Egg Beaters as requested by Mom, but it didn't seem to matter - it was still good! :)

Original Recipe French Toast

This was really delicious - my BF usually doesn't like a sweet breakfast, but served with some thick sliced bacon and scrambled eggs, he was in heaven! Loved this recipe and look forward to having it again.
