About this Cook
I've been married for three years. We used to eat out often, but ever since our son started eating 'real' food, I've been more interested in cooking healthy meals for him. He is now 21 months old and we have a newborn daughter as well.
My favorite things to cook
Healthy mini muffins for my toddler, scones with tea for me, casseroles and hearty one dish meals, desserts. I'm looking to start cooking lower fat, healthier food for my family, without my husband being able to tell the difference!
My favorite family cooking traditions
None! My family did alot of Hamburger Helper and Papa Murphy's. Now that I have my own family, I'm looking to start some new traditions.
My cooking triumphs
"Grandma's Scones"! Love them. Can make them whatever way you want and they always turn out good! They look great in baskets for new neighbors, housewarming gifts, even new baby gifts (for the mom of course!). We make them all the time. Some other family favorites include "Salmon Chowder", Cooking Light's "Herb Braised Chicken and Potatoes" (not on this site, but email me if you want it!), chicken pot pie, stuffed shells, chicken noodle soup with garlic bread, homemade alfredo with chicken and broccoli, and tuna melts. We tend to go for easy dishes that reheat well and dirty a minimum amount of dishes.
My cooking tragedies
Plenty! Most recently, it was trying to make orange flavored shortbread. I love Duchy Organic's lemon shortbread but wanted to make my own. Since I didn't have lemon, I tried orange. BIG mistake! The citrus did something to the batter, making them run and boil on the cookie sheet. I tried refrigerating the dough for a long time, but no change.

Gingerbread Boys
Great! For our own preference, I used half King Arthur white/whole wheat flour, and half King Arthur unbleached all-purpose. I used 1 cup organic white sugar, and 1/2 cup regular golden brown sugar. Grandma's molasses instead of dark corn syrup. And I divided the batch into 3, made into disks, wrapped in plastic wrap and chilled for 2 hours. Easy to roll, perfect soft texture, mild flavor. I would prefer them spicier, but they're good as is too.

Zucchini Pie
Upped the recipe by using a total of 10 eggs, 1 cup cottage cheese (instead of oil), eyeballed 1 cup parmesan, 4 cups shredded zucchini, 1 whole onion diced small, a heaping cup of Bisquick. Texture was great, even kids ate it. Needs lots of pepper and a sprinkle of fresh parmesan on top. With these additions, it made one smaller pie and one deep pie. Baked at 380 for about 45mins.

French Baguettes
I am an experienced challah baker. This recipe was super easy, very little mess, and came out perfectly. I do not have a bread machine. I put the yeast and sugar in Kitchen-Aid mixer bowl, added 110 degree water, let proof for about 10 mins. Added the bread flour, kneaded for 6 mins on the dough hook, pulled off dough hook, let sit for 15 mins covered in lightly oiled bowl, kneaded in 1 tsp kosher salt, then let rise as directed from there. They look great. I will definitely make these again for sandwiches. 4yr old went nuts for them. Next time I will definitely double the recipe, the 2 baguettes were on the small side.
