I live in Logan, Ia and work in Omaha, Ne. I work for a Risk Management Dept for Workers Compensation. I have an 18 and 22 year old son and so far they have eaten alot of my experiments but haven't complained....much anyway, lol. Mexican and Italian. I love quick simple meals due to my long commute everyday so the crockpot is my best friend. I also love experimenting with potato dishes and vegetables. All birthdays get to be celebrated at Linda Lou's pizza joint in Logan. She has the best pizza in town and puts the larger pizza chains to shame. I'm a casserole queen and can almost make a casserole out of anything. My roast chicken and crock pot roast are pretty good too. I make a great Enchilada sauce. I can't fry chicken to save my soul. So I roast them in the oven instead.
