Rice and Lentil Soup in a Jar
American Living in Sweden
About this Cook
I'm a native Hawaiian but grew up in south Texas and am now living in southwest SWEDEN with my husband and 3 kids.
My favorite things to cook
I love to bake! I love the way the house smells after a batch of cookies has come out of the oven, or a cake and especially apple pie. Yum!
My cooking triumphs
I think I make a mean cornbread! It's not too sweet and has been handed down in my family.
My cooking tragedies
The first time I tried making homemade tortillas was truly a tragedy. I used a tortilla press and held the handle down too long. What I got was a kind of see-through wafer that resembled communion! LOL

Hot Breakfast Couscous
Fantastic!! I LOVE couscous and I used regular couscous (not the pearl kind). I made the recipe for just 2 people and left out the fruit, and added 1/2 c. more milk and 1/2 c. more almonds. This was so delicious! I really like the crunchy-nutty taste of the almonds, and the light sweetness of the honey. Super healthy, low carb and low salt too! Plus, I was full for the entire morning until lunch time, no cravings for snacks. Thanks so much for a yummy recipe...it's already been added to favorites!

Plum Quick Bread
I don't usually eat plums, but we found some trees loaded with them and decided to pick a few pounds...I give this recipe 5 stars, although I did make several changes to suit my family. 1. I only used the 1 c. of regular white sugar in the batter. 2. I used 1/2 c. vegetable oil. 3. I didn't have buttermilk and I live in Sweden so I used 1 c. of filmjölk (thick sour milk) and 1/2 c. of regular 2% milk. I sprinkled the cinnamon on top of the batter then I mixed 1/2 c. brown sugar with 1 c. chopped pecans. It came out very tasty! I like the flavor of the lemon in the bread too. I used yellow Shiro plums which were ripe and sweet. Some of the plums sank to the bottom of the pan even though I floured them beforehand, but we don't mind. This was a nice change from the usual sweet breads. It was delicious~ Thank you for a lovely recipe!

Frosted Banana Bars
Awesome recipe! Only changes I made was to add one more cup of bananas and bake it in a 9x13 pan. (I wanted more of a cake texture) I frosted it with Tom's whipped cream cream cheese frosting from this site and it was a HUGE hit! Thanks deltaj for a delicious recipe!
