Key Lime Pie I

This got rave reviews at our house! We were given a basket of key limes so I was able to use fresh squeezed lime juice. I cut a corner by using a pre-made graham cracker crust. I'm sure homemade would be better but the filling was so good it made up for it. I had to bake it a little longer than called for to get it to set up. I pulled it out of the freezer while we ate dinner and it was perfect to cut for dessert.

Amazing Pork Tenderloin in the Slow Cooker

Good results for me! My roast was tender & juicy. Everyone liked it. I cut back a bit on the wine & used Lipton onion mushroom soup mix because that is what I had on hand. I used corn starch to thicken the gravy. Served it with rice this time but next time I would definitely make mashed potatos to take advantage of the yummy gravy.

Chocolate Cavity Maker Cake

Followed the recipe exactly & with wonderful results! This is an extremely rich and moist cake that doesn't require frosting or glaze on top. A dusting of powdered sugar was perfect. This recipe tastes so much "harder" than it actually is to prepare.

Salsa Chicken Rice Casserole

Yum! This is a great casserole recipe that both adults & kids in my family liked. I made 1/2 a recipe to try it out. I baked & diced the chicken instead of boiling. Since I was doing a 1/2 recipe, I omitted the cream of mushroom (otherwise I would have had 2 unused half cans of soup.) Next time I might layer it a bit differently to get more of the sauce mixed into the rice. This is an easy recipe to adapt to your own taste and I think it would be great to make ahead and freeze for later.

I don't see how you could go wrong with this marinade. I followed the recipe exactly except for using dried herbs. Great main course! Will definitely make again.

Cheese-Stuffed Jalapenos

I've made these twice recently & everyone loved them! I added a little garlic salt & red pepper to the cheese mixture. I prepared a bunch of peppers in advance and put them in the freezer. It was very easy to thaw them to make for a party. Next time I'll prepare some extra to keep frozen for a last minute party snack.

Blueberry Dump Cake

We enjoy this recipe! I've made it twice using some of the suggestions from other reviews. I used 1/2 the suggested amount of sugar. It is still very sweet & next time I will cut back further. I grated the butter & spread it on top of the cake mix. Just watch for dry spots during baking and put a little pat of butter on them if there are any. I served this with whipped cream. Very yummy!

Simple Garlic and Basil Pesto

I've made pesto with these basic ingredients before. The chili powder made this version a little different and I thought it gave the pesto a little extra flavor. I didn't have enough pine nuts so I also used some slivered almonds.

Taco Seasoning Mix

A good taco seasoning and easy to scale back if you don't want to make a large batch. 1/6 of the recipice was more than enough for 2lbs of beef. I used fresh garlic while browning my meat instead of flaked and cut way back on the salt.

Roasted Tomato Salsa I

Yum! I made 1/2 a recipe which was perfect to have with our mexican dinner plus a little leftover. I cut & seeded tomatos and jalapenos and peeled the garlic before roasting. My husband suggested that I peel the tomoatos next time. Great flavor!

Basil Pan-Seared Scallops over Pasta

This recipe was okay but to be fair, I did change a few things. I messed up and added the dried basil to the mixture. I cut back on the amount of basil because I added fresh basil from my garden toward the end of cooking. I also added some tomato and some shrimp. I cut back a little on the butter & oil and served with grated parmesian cheese. It was very easy to make and resulted in an "okay" meal but not anything we raved about.

Speedy Ice Cream

This is a fun activity for kids! I didn't have half & half, so we used 2% and a little leftover whipping cream that I had in the fridge. I think any combination of milk, 1/2 & 1/2, or whipping cream will work as long as you use a cup of liquid. You can vary the fat content that way too.

Fideo (Mexican Spaghetti)

I made this using several suggestions from other reviewer: used rotel, added 1 small can tomato sauce. I also used cubed grilled chicken that I had on hand and used Fideo pasta becasue is it pretty common where I lived. Kids like it & you can easily vary the amount of chili powder to suit your own taste.
