Pumpkin Black Bean Soup
I did not puree the beans and I used fresh instead of canned. Soup needs to sit a day for the flavors to blend. Nice filling soup.

Hoisin-Ginger Beef Skewers
Yum!!! I just made this for dinner and it was great. I was lazy and just simply marinated a flank steak for 1 1/2 days and then grilled. AWESOME!!!

Mexican Style Cornbread
Good recipe. I couldn't find 8 oz can creamed corn so I just used the 14 oz and it turned out great. I also added about 2 tbsp sugar as cornbread should have a little bit of sweetness.
