Ham 'n' Cheese Egg Bake
This recipe is GREAT - I've made it several times and have never had a complaint. I've made it exactly as instructed on most occasions but, there were times I did not have everything on hand - I've substituted canned mushrooms for fresh ones - added them when I added the ham; diced onions in place of scallions; and green peppers in place of red peppers - it always came out delicious. This recipe is very versatile. I always used 8 large eggs and it never came out too thin for my 9x13 dish - just might take 5-15 minutes long or that may just be my oven. Thanks for the great recipe.

Mama's Italian Wedding Soup
I made this a couple of months ago for a dinner party - it was a great hit. I made my own meatballs and used Acini di Pepe for the pasta - it was difficult to find but "Prince" does make it. As far as making the small meatballs, I used a mellon baller for scouping it before rolling it around in my hand, only a little bit quicker - but this soup is well worth it. I had made extra and froze it [without the pasta] just added pasta to it after defrosting it, tasted just as good as the day I made it. Yes, this can be a bit time consuming , but it is very easy to make. Thanks for the receipe.

Easter Meat Pie
I"m rating on the ingredients only - I've checked all my usual recipes site and could not find any recipes for Pizzagaina so I tried looking for Italian Easter Pie and I finally found what I was looking for in this Easter Meat Pie. I agree with another individual, by adding onions, garlic or even mushrooms or peppers you no longer have Pizzagaina or aka Italian Easter Pie you have your own recipe for something else. Not that that's a bad thing at all. I also like to experiment.
