Paul's Pumpkin Bars

I really have enjoyed this recipe! I have had many compliments on these bars and even a recipe request. They are moist and delicious. I did use 1/3 oil and 1/3 melted butter since I ran out of canola oil and a 9x13" pan which I baked for about 40 minutes since it was thicker. This recipe is a keeper!

Navratan Korma

This was a tasty recipe but did not taste like a traditional Indian korma that you would get in a restaurant. I followed the directions except did not saute the paneer since I enjoy the soft texture of it. My husband also commented that he enjoyed it but did not think it had the same taste of a regular korma.

Vegetarian Tortilla Soup

This was a delicious soup and I enjoyed it very much. It was also very easy. I followed the directions and topped it with tortillas, avacado, and cheddar cheese. I will make this again!

Beef 'n' Biscuit Bake

My husband loved this dish but I thought it was just okay. We followed the directions but added more spices and subbed pinto for kidney beans and veggie crumbles instead of beef. My complaint was that the bottom of the biscuits seemed uncooked or mushy but the only way to avoid that would probably be to cook them separately.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Usually I do not have much luck replicating the flavors I get in Indian restaurant dishes. This was the exception! It tasted authentic. The only problem I had with it is that the time in the recipe is not long enough to get the potatoes and cauliflower to cook thoroughly. I had to add time to it and as other reviewers mentioned additional water was necessary so the food would not bun. Next time I would cook or par cook the potatoes first.

15-Minute Dinner Nachos Supreme

This dish made a delicious, easy meal in just a few short minutes. I followed the directions except using instant brown rice instead of white and veggie crumbles instead of beef. I also added black beans to the mixure. We will continue to make this!

Apple Oatmeal Crisp

Great, basic recipe. I chose this recipe since it had easy to put together ingredients and the results were fantastic. I did use blueberries instead of apples since it is blueberry season, but I think this is a recipe you can easily adapt to any type of fruit! Used splenda instead of white sugar.

Blueberry Lemon Bread

Yummy, dense quick bread. It had a lot of lemon flavor since I added extra lemon zest and a teaspoon or two of lemon juice to the recipe as well. to make it easier for me I melted the butter and that worked out fine too since I did not have time to wait for the butter to soften. We will make this again!

Refreshing Summer Orzo Salad

My husband enjoyed this more than I did. I followed the directions except using veggie stock. I do not enjoy olives so I put them separate so my husband could add them to his own dish. This was the first time I tried capers and unfortunately I did not like them. I recommend to all others trying them for the first time to try before you add the liquid to the dish. I substituted walnuts for pine nuts to reduce the cost. The spices added much flavor to the pasta.

Meatless Loaf

This recipe was just okay for me. As another reviewer stated it was much too salty since both the veggie crumbles and soup mix contain lots of salt. I prefer using the Cottage Cheese Loaf recipe on this site instead and my husband agreed. I did bake some carrots and other veggies while this baked to make my meal easy.

Couscous, Cranberry, and Feta Salad

This recipe had good points but also tasted plain. I liked how the cranberries plumped when cooked in the hot water with the couscous. I got dried cherries and cranberries mixed and that was great. I added chickpeas to this to make it a more main dish type of salad and add protein. I used lemon juice instead of balsamic. Overall, however, it did seem plain and we would not make this again, but did eat it all up.

Au Gratin Potatoes II

This recipe was so delicious and so creamy! Best potato casserole that we have ever made, hands down! We did use light cream of mushroom soup instead of cream of celery. Also cut the butter in half for on the cornflakes and would cut it down even more in the future. used frozen hashbrowns to make it easy. Yum yum!!! Leftovers were great too!

Normally I do not enjoy zucchini very much but loved it in this recipe! It was so yummy! This recipe was also very easy to make and put together. I followed the directions except used canned corn instead of frozen. We put it in corn tortillas and topped with cheese. We will make this again!

Asparagus Cashew Rice Pilaf

Fabulous, delicious recipe! It even tasted better than I expected. I reduced the butter used and used whole wheat spaghetti. I tried to use less pans and put the asparagus in with the rice while it cooked but it did end up getting too cooked this way. Next time I'll use the extra pan and follow the recipe!

Nutty Apple Crisp

Yummy apple crisp recipe and the walnuts made a great addition! I made a few small changes such as adding lemon zest since I love the lemon flavor with the apple. Also, I used cinnamon instead of nutmeg. Next time I would mix the apples with a little flour to thicken their liquid better when cooking.

Chuck's Favorite Mac and Cheese

I am very picky about macaroni and cheese recipes but I really enjoyed this one! I was able to use low fat cottage cheese and sour cream to make the recipe healthier and it still taste great. Also, instead of mixing the bread crumbs with butter I sprayed them with nonstick spray before baking. I will make this recipe again!

Chickpea Macaroni Salad

This pasta salad was delicious! I have already made this recipe twice which is rare for me! I followed the instructions but added cucumber one time and peas (frozen, tossed in at the end of the pasta time) another time. I reduced the amount of oil used as well and it was still great. I will continue to make this delicious easy recipe again!
