About this Cook
I'm a stay-at-home-mom of two wonderful boys. I *LOVE* to cook and bake, as I find it to be a great stress reliever and creative outlet (as long as the little one isn't screaming at my feet). I've learned a LOT from All Recipes by comparing the differences between similar recipes (Alton Brown has helped a lot too &hearts ). We've recently transplanted from east coast to west coast where food is more expensive (the current economy hasn't helped) so my current challenge is to do more meal planning to reduce food costs. I strongly believe in altering recipes to suit one's tastes, dietary needs, and ingredients on hand. After all, if we never altered recipes, we wouldn't have great chefs with original twists to old favorites or great cooking shows! ;-)
My favorite things to cook
SWEETS SWEETS SWEETS!! My sweet tooth is insatiable sometimes. Anything quick and easy. I love pastas, casseroles and slow cooker recipes. My taste buds and I get bored easily, so I'm always looking for new recipes to try.
My favorite family cooking traditions
Our family is young, so we don't have a lot of traditions yet. My older son likes helping measure and stirring ingredients, so I try to have him help when there's time. I guess cookies are becoming a tradition. Cookies for almost every holiday! Son #1 always helps me decorate sugar cookies for Easter, Halloween and Christmas.
My cooking triumphs
This past Thanksgiving I successfully hosted my first dinner. Everything went really well, and all the dishes were timed perfectly.

Steak and Bacon Tournedos
This was a nice way to dress up flank steak, and is a good basic recipe for "fine-tuning" to meet your personal tastes. My changes: I didn't have tenderizer, so I decided to marinade for 1.5 hours in 1Tbs red wine vinegar, 1/4 cup canola oil, and 4 big cloves chopped garlic. In addition to the bacon, I added shredded parmesan and thick-sliced mushrooms. I used regular salt instead of seasoned salt, and no garlic powder. I also soaked the toothpicks to prevent burning. Next time I'm going to add either cooked rice or barley, and roasted red peppers.

Shrimp Red Thai Curry
This is a good base for this dish, but I too changed to suit my tastes... I used lite coconut milk, but will use regular from now on. It imparts a thicker texture and flavor than the lite version. I also used sweet red and yellow peppers, and added bamboo shoots and fresh cilantro.

Pizza Dough III
A great crust! I doubled and made 2 thick crust 16 inch pizzas. I probably could've done 3 thin crust. I also added 1.5 tsp garlic powder, 1/2 tsp black pepper, and 1 Tbs Italian seasoning.
