About this Cook
I'm a stay-at-home-mom of two wonderful boys. I *LOVE* to cook and bake, as I find it to be a great stress reliever and creative outlet. I've learned a LOT from All Recipes by comparing the differences between similar recipes (Alton Brown has helped a lot too &hearts ). I strongly believe in altering recipes to suit one's tastes, dietary needs, and ingredients on hand. After all, if we never altered recipes, we wouldn't have great chefs with original twists to old favorites or great cooking shows! ;-) In an effort to eat healthier, I have a small garden in our back yard, and in 2010 will be participating in an organic farm's CSA. Feel free to visit my gardening blog. http://gardeningwithcare.blogspot.com/
My favorite things to cook
SWEETS SWEETS SWEETS!! My sweet tooth is insatiable sometimes. Anything quick and easy. I love pastas, casseroles and slow cooker recipes. My taste buds and I get bored easily, so I'm always looking for new recipes to try.
My favorite family cooking traditions
Our family is young, so we don't have a lot of traditions yet. My older son likes helping measure and stirring ingredients, so I try to have him help when there's time. I guess cookies are becoming a tradition. Cookies for almost every holiday! Son #1 always helps me decorate sugar cookies for Easter, Halloween and Christmas.
My cooking triumphs
This past Thanksgiving I successfully hosted my first dinner. Everything went really well, and all the dishes were timed perfectly.
My cooking tragedies
Not too many tragedies, fortunately, so I can't think of any at the moment...

Zucchini Fritters with Fresh Mozzarella and Tomato
Wonderful fritters! I followed the recipe as stated, only I made my fritters a little smaller than 1/4 cup batter per fritter. I used Old German Heirloom tomatoes, and also topped each fritter with a little chopped fresh basil. I served this with grilled "Balsamic Chicken." Nom! To reheat these fritters, microwave until just warm, then heat the rest of the way in the toaster oven...

Blueberry Smoothie
I want to start out by saying nutmeg is my most favorite spice. Period. This is the first time I haven't liked nutmeg in something! It just doesn't GO in this recipe, and I only used a few dashes... Other than this problem, it's a great recipe. I added a ripe banana, and used frozen blueberries.

Banana Frittata
This is such an unusual sounding recipe, but I've become addicted to it! I cut the recipe in half, and my toddler and I eat this frittata several times a week for breakfast now. The only change I have is like others, which is to mash the banana(s) and mix into the egg/flour mix. The KEY to cooking this frittata well is LOW AND SLOW. Low temp, and longer than you would, say, an omelet.
