Florentine Strata

TIP: When making a strata, I always place saran wrap over the top and press it down on top of the strata. I will place boxes (ie: brownies, cake mix, etc.) on top to hold the saran wrap down. Place the strata in the fridge overnight. This will keep the pieces of bread from burning, and soaks all the egg into the bread. Love this recipe...turned out golden brown and PERFECT!

Dutch Potatoes

I made this tonight for dinner with ribs. The kids were leery at first because of the color. I assured them they were good. After the first hesitant bite, they gobbled them down. My cheese lover insisted there was cheese in it. I used baby red potatos and didn't peel them first. I always just blend the peel right in. Since I didn't think about the carrot needing longer to cook, I had some small pieces of carrot in there too, but it was still very good. This is definately a keeper, and the name added some dinner conversation. "Mom, where are Dutch people from?" Thanks!

Green Rice I

I should have followed the reviews on the seasoning. I was going to but I forgot. It was a bit bland. I would have added salt, garlic powder, & pepper. It was still very good and I could see the potential with this recipe. I'll try it again.

Best Bread Machine Bread

I have to admit I didn't read the directions. After making it, I couldn't wait to taste it. I thought it tasted bland. Something was missing. After reading other reviews, I will try the proofing first and add a bit more salt. Other than that, it rose well and turned out very soft. Thank you!

Savory Roll Ups

I made this recipe tonight. We all thought it was good. I didn't use the Jarlsberg cheese, which I've never had. I'll probably look for it when I'm at the store again. I used plain old cheddar, which I'm sure is not nearly as good, but it's what I had on hand. They were nice. I would have liked to try some ham or something salty in there. All in all, I will definately make again.

Chow Mein Noodle Casserole

This was an easy recipe. I made it for that reason alone. The kids really liked it, the hubby and I could take or leave it. Just so so. Made with garlic as suggested and added fresh mushrooms to it. Didn't mix the rice with the meat mixture and bake it. Instead added the soup, water, etc. to the meat and just served it over hot rice.

Pat's Baked Beans

Made these for a family reunion. I may have added more Worchestershire sauce than it called for, honestly I didn't measure any of the ingredients. A little confession...I NEVER measure. Anyway, they were fabulous. This is the second time I have made these, this time on request. The first time I used dried beans, but didn't cook them long enough. This time, I used dried again, but made sure they were cooked enough. I really like the flavor of these beans. Thanks!

Oven Fried Chicken IV

This recipe has a lot of flavor. I left out the Rosemary because the husband doesn't like. I added about 1 Tbsp. Tobasco sauce to the sour cream. The downfall that I will change next time is, I would pound the chicken breasts thinner, and would cook for a shorter amount of time. I cooked frozen chicken breasts for 1 hour and they were dry. That could be an altitude thing. I think this recipe has potential and like the fact that it doesn't call for oil or butter. I could use low fat/non-fat sour cream and it would be a TON healthier than fried chix. I like how crispy the outside gets. Definately will try again with a meat thermometer to make sure the inside is just done. Bet it will be extremely moist.

Chicken Stroganoff I

I think the sauce on this stroganoff is the best I've tasted. I have again made "something out of nothing" as we call it here in our house...when we don't have any food, but I am able to scrape up a recipe of things I have on hand. These types of recipes make me look like a superb cook. The family loved this one. Instead of the chicken, and dredging, I substituted homemade italian meatballs I had in the freezer. Delish!

Banana Pudding IV

Made a banana cream pie with this recipe by omitting the nilla wafers and adding it to a graham cracker crust. Also made with the nilla wafers. The only substitution I made was real whipped cream instead of the cool whip. We like whipped cream better. Can't wait to make this for my Dad who's favorite 'birthday cake' is Banana Cream Pie. Thanks!

Italian Vegetable Soup

This 'soup' reminded me of the recipe my mom would make for goulash. It was very good, but the hubby thought it should be soupier. His family never ate things like this. I made it with ground turkey b/c that is what I had on hand. I would like to try it with the homemade HOT Italian Sausage my hubby makes. That sounds good. Will be using this recipe again.

Cha Cha's White Chicken Chili

Hot, Hot, Hot! You got it...VERY good though. Will cut back on spices for the kids next time. They even like spicey things, but this was a touch too much. Very good recipe though. Will be making again. Hubby adores this!

Whole Wheat Beer Bread

Made 6 loaves for my dad's 60th. This was a big hit. The kids are loving it! Also, on a side-note, I made a loaf with wheat-free baking mix and wheat-free beer (YES, made by Anhauser Busch). It was also very good. If you know of anyone who is allergic to wheat, this could be an option. I would like to add, that even though the wheat-free baking mix had the baking powder and salt already, I added what this recipe called for anyway. According to what I read, wheat free needs a little help with the rising. Both kinds very good!!!

Tender Potato Rolls

I will rate this recipe on others reviews alone. Could not give it a bad review, even given my experience because, as you bread makers know, bread can be tricky. Here's what happened...I got creative! I tried 1/2 whole wheat flour & 1/2 bread flour. Plus, my yeast may have been old. They just didn't rise. They were dense and small. I'm sure that's not right. I will try again. Thanks again.

Chicken Manicotti Alfredo

We did not like this recipe. We also found it bland, and as other reviewers mentioned, for the cost, I would not make it again. Suppose you could use something more to marinate it in that would add flavor, and possibly the marinara sauce added would zip it up. It just wasn't what I was looking for. Thanks though
