Pesto Chicken Florentine
This was a fabulous, easy-to-make chicken dish. I'm always looking for something new in the way of chicken recipes because my family only eats fish and fowl. This one is a keeper. Just one note, next time I will add the whole package of fresh spinach. Two cups cooks down to so little.

Roasted Pork Loin
This is an easy and fabulous recipe. However, 2 hours at 350 is way too long to cook a 2 pound roast. I baked it at 325 for 1.5 hours and it came out moist and delicious. I used a whole can of beef broth instead of wine and I added it from the start instead of at the end.

Awesome and Easy Creamy Corn Casserole
I recently made this recipe and doubled it. Ten people tried it for the first time and all wanted the recipe. It's VERY easy and VERY delicious! It reheats very well and freezes well too! Awesome!
