Roasted Okra
Mercy me, these were delicious. I cut a few okra up, splashed a little olive oil in the bowl, sprinkled a little seasoning salt on them, tossed and spread in a pan along side sliced zucchini. I rarely fry foods, so this was a terrific substitute for fried okra. Keep in mind that the longer you cook it, the smaller it shrinks, so what you think will serve four could end up being barely enough for 2.

Snickerdoodles V
I made these snickerdoodles because they used shortening and I didn't have time to soften butter. These are certainly very good cookies. I used my smallest scoop and got 5 dozen cookies that were about 2.5 inches across. They were lovely, small cookies. This was an easy recipe and very much worth making again. I increased the sugar-cinnamon to accommodate more cookies, adding a little extra cinnamon to ensure the color and taste contrast.

Raspberry Vinaigrette
I halved the recipe for one bag of spring mix and it was more than enough. It would have been plenty for 2 bags of mix. The one bag divided out perfectly for 6 people. Served this as a bed for Moroccon Salmon cakes, where I wanted a simple, basic salad that wouldn't compete with the salmon cake. I probably used a full teaspoon of dijon for 1/2 the recipe. This dressing was simple and not overwhelming, just what I wanted.
