Marinated Grilled Shrimp

Reviewed: Dec. 26, 2009
I followed this recipe with the following exceptions: 1) used one tablespoon of dried basil since I didn't have fresh; 2) used frozen and thawed cooked jumbo shrimp since I didn't have fresh. The flavor was great except next time I will use fresh shrimp as the pre-cooked shrimp get dried out and rubbery on the grill even for 2 min. on each side.

Mini Cheesecakes I

Reviewed: Dec. 26, 2009
I followed the recipe all the way except for taking the advice of other reviewers and using crushed graham crackers with a little butter for the crust instead of vanilla wafers. The cheesecakes were very bland and the crust falls off the bottom when you peel away the paper liners. Probably won't make these again and no one said they were special.

Mom's Pumpkin Pie

Reviewed: Nov. 29, 2009
I made this recipe exactly as stated except I used one cup of milk as other reviewers advised. The taste was wonderful but I caution you to use the pie rings right from the beginning as the crust started to burn right from the get-go. Also, I tried to make two pies out of the filling but was only able to make one 9" and one 8".

Southern Candied Sweet Potatoes

Reviewed: Nov. 29, 2009
Good but it made way too much syrup. I used 1 cup white sugar & 1 cup brown sugar instead of two cups of white sugar. Next time I will use 3/4 cup of each. Otherwise nice flavor and aroma.

Turkey in a Bag

Reviewed: Nov. 29, 2009
I made this turkey exactly as stated except I also added some baby carrots inside the cavity along with the celery and onions. BE CAREFUL about the cooking time. My eleven pound turkey was done in 2-1/2 hrs. It was a little dry since I left it in an additional 15 minutes in hopes that it would brown some more. It didn't brown as much as I would have liked, but it made a nice broth for making gravy without all that butter. I will definitely make it again but take it out before it's overdone this time.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Oct. 28, 2009
OMG! I don't normally care for oatmeal raisin cookies but these were FANTASTIC with the following changes from other reviewers. I used 3/4 c. butter and 1/4 c. plain shortening, 1-1/2 teas. vanilla, 1-3/4 c. flour, 1/4 teas. cloves and threw in a handful of chopped walnuts. Can you say YUMMY????

Easy Salsa Meatloaf

Reviewed: Oct. 22, 2009
I followed this recipe to the letter except I used ground turkey instead of beef and it was not good. It turned out dry and bland. Husband hated the fact that he bit into chunks of onions and peppers from the salsa. Also, you can't put ketchup on turkey meatloaf.

Pumpkin Chip Cookies

Reviewed: Oct. 14, 2009
These cookies melt in your mouth. Everyone loved them! The only changes I made were I halved the recipe and still used 1 egg, used 1 teas. pumpkin pie spice instead of cinnamon and used mini chocolate chips instead of regular. I ended up with 38 cookies.

Roasted Garlic Cauliflower

Reviewed: Sep. 23, 2009
After reading all the positive reviews I couldn't wait to make this recipe. Sorry to say, no one liked it. I followed the recipe exactly and the cauliflower came out very dry and somewhat bland. My daughter tried dipping it in blue cheese dressing and said it made it a little better.

Slow Cooker Pulled Pork

Reviewed: Sep. 23, 2009
I made this recipe exactly as written except I added a teaspoon of minced garlic. The flavor was just okay. The thing I didn't like the most was the sauce was way too runny. We like our sauce on the thicker richer side.

Zucchini Brownies

Reviewed: Sep. 9, 2009
Rich and Delicious!!! Made this exactly as stated with no changes. My hubby loves frosted brownies and he had no idea these were made with zucchini. Even my 2 yr. old granddaughter said they were "the yummiest brownies ever!"

Easy Batter Fruit Cobbler

Reviewed: Aug. 1, 2009
This is not your typical cobbler. I made this recipe using fresh raspberries. I used 3 cups of berries instead of 2 and added a dash of cinnamon and nutmeg. I baked it for 50 minutes and the outside was hard and dark brown and the center was gooey. The taste was O.K. I won't make this again as there are much better cobbler recipes out there.

Chocolate Zucchini Bread I

Reviewed: Jul. 19, 2009
Very moist and fantastic flavor BUT even though I thoroughly greased a non-stick bundt pan, I needed a chisel to get it out. It broke up into several pieces. Good thing I only made it for my family. Since they really liked it, they didn't mind that it was broken up. Also, my three yr. old didn't like those "green" things in the cake, so next time I'm going to peel the zucchini first.

California Cole Slaw

Reviewed: Jul. 4, 2009
I made this recipe with the following changes and it came out perfect: I used one small head of cabbage and one small head of red cabbage; I omitted the red pepper since I didn't have one; and I only used 3/4 cup canola oil. Everyone loved it. Will definitely make again.

Rhubarb Sour Cream Pie

Reviewed: Jul. 4, 2009
I made this pie with the following exceptions: I used 1-1/4 cups sugar and used 1 cup of cut up strawberries and 3 cups of rhubarb. No one liked this pie. They said the crumb topping was too thick and the inside tasted too much like flour.

Ham and Chicken Casserole

Reviewed: Jun. 14, 2009
This was very good recipe but I made the following changes: used 1/2 cup olives since that's all I had. Used angel hair pasta instead of noodles since I didn't have any of those either. Even the 1/2 cup of olives gave it a weird Mexican taste, so next time I will omit the olives and use green peas instead.

Rosemary Chicken with Orange-Maple Glaze

Reviewed: Apr. 30, 2009
I made this last night and my husband couldn't get enough of it. It was very easy to make and really quick. The only changes I made were I did as another reviewer did and divided the orange juice to 3/4 and 1/4 cups so I could add 1-1/2 tab. cornstarch to the 1/4 cup to add at the end. This made the sauce a perfect thickness. I also added 2 Tab. honey to the 3/4 cup orange juice when it was being reduced down and 1/4 cup maple syrup. We're not that crazy about rosemary, so I only used 1 teas. Will definitely make this again.

Chocolate Chip Banana Muffins

Reviewed: Mar. 17, 2009
Excellent muffins! Only lasted 2 days in my house. The only changes I made were I used 1/2 cup organic vanilla yogurt and baked in mini muffin pans sprayed with non-stick spray (made 48 muffins). Definitely a keeper.

EAGLE BRAND® Mocha Walnut Pie

Reviewed: Feb. 9, 2009
I made this recipe exactly as stated and my family didn't like it at all. They said it was tasteless and had way too many walnuts. I used a 9" deep dish pie shell and there wasn't enough filling to fill it so it didn't look very appetizing.
