Key Lime Pie VIII

Nothing special. I followed directions exactly except I added 1/4 cup shredded coconut as another reviewer suggested and no one like it. Everyone said it tasted just like eating a cool whip pie. It also didn't have any green color to it whatsoever, so I added two drops of green food coloring to give it more eye appeal. Still didn't help. Will not make again.

Orange and Maple Glazed Turkey

Followed recipe exactly as stated and the turkey juices and syrup starting burning within the first 10 minutes. I turned the oven down to 400 and it still kept burning the bottom of the pan enough so that the smoke alarm went off. I turned it down again to 375 but I had to add water to the bottom of the pan. Turkey ended up very dry. I will not make this again. I will stick with my traditional way of roasting the turkey from now on.

Apple and Spice Cookies

Great flavor but cookied don't mix well or look appetizing at all. They come out flat like silver dollars and are somewhat dry and fall apart very easily. Make sure you put a plate under your chin.

Peach Cobbler VI

Followed the recipe exactly and my husband loved it. I on the other hand didn't care for it. It was too gooshie. Also, it needed extra sugar & cinnamon sprinkled on the top because I felt it was too bland. Maybe vanilla ice cream also would have helped.

Banana-Zucchini Bread

Good moist bread but it was lacking something. I made the following changes and maybe that's why. I used 1 c. applesauce in place of the oil; 1/2 c. white sugar instead of 1 cup; and 2 cups zucchini. Everything else stayed the same. Also my family didn't care for the dried cranberries in the bread.

Blueberry Boy Bait

Very good but my family thought it tasted a lot like coffee cake and they needed a glass of milk to wash it down. I followed the recipe except I added another 1/2 cup of blueberries and 1 teas. of vanilla and 1 teas. cinnamon for more flavor. Baked it for 45 min. and it was just right. Next time I am going to make a blueberry recipe that doesn't call for quite as much work. It took more than 20 min. of prep time.

Chocolate Oatmeal Cookies

Sorry folks, this recipe was nothing special. In fact, I'd have to say I followed the recipe to a tee, and they turned out very dry and tasteless. Even a big glass of milk wouldn't help these puppies.

Coconut Cranberry Bars

Very easy to make. Everyone loved them except my husband. He prefers Oatmeal Raisin Cookies instead. The only change I made was I didn't have quite enough white chocolate chips, so I add 1/2 cup cinnamon chips. Everything else was the same.

White Chocolate Fruit Tart

Fantastic recipe. Everyone raved at the party. None left. I made the crust in a 12" pizza pan. Do not over bake as crust will come out too crispy. I baked mine for 25 min. and it was too long. I also used half & half instead of heavy cream and it was fine. Make sure you use the glaze on top as it makes for a very professional appearance. Definitely will make again and again.

Cabbage Jambalaya

My family loved this dish. Especially my picky 3 yr. old. I made the following changes: instead of using ground beef, I used ground turkey and 1 lb. of turkey sausage. I added one diced red pepper and in place of the stewed tomatoes I used one can of cream of mushroom soup. The last thing I did was to use chicken stock in place of water for more flavor. It came out delicious and my family asked that I put this in my favorite recipes book.

Baked Scallops

Lemon Lush Pie

My family loved this pie. I made the following changes: I used a 9" graham cracker crust; 3/4 cup milk, 1/2 cup lemon juice and a heaping tablespoon of grated lemon zest. Make sure you really cook this until it's very thick and don't use light sour cream or it will be a little runny. When it was completely chilled, just before serving I put a layer of cool whip on top and there wasn't a drop of pie left. I highly recommend this pie for a spring or summer treat as it is very refreshing.

Marinated Grilled Shrimp

I followed this recipe with the following exceptions: 1) used one tablespoon of dried basil since I didn't have fresh; 2) used frozen and thawed cooked jumbo shrimp since I didn't have fresh. The flavor was great except next time I will use fresh shrimp as the pre-cooked shrimp get dried out and rubbery on the grill even for 2 min. on each side.

Mini Cheesecakes I

I followed the recipe all the way except for taking the advice of other reviewers and using crushed graham crackers with a little butter for the crust instead of vanilla wafers. The cheesecakes were very bland and the crust falls off the bottom when you peel away the paper liners. Probably won't make these again and no one said they were special.

Mom's Pumpkin Pie

I made this recipe exactly as stated except I used one cup of milk as other reviewers advised. The taste was wonderful but I caution you to use the pie rings right from the beginning as the crust started to burn right from the get-go. Also, I tried to make two pies out of the filling but was only able to make one 9" and one 8".

Southern Candied Sweet Potatoes

Good but it made way too much syrup. I used 1 cup white sugar & 1 cup brown sugar instead of two cups of white sugar. Next time I will use 3/4 cup of each. Otherwise nice flavor and aroma.

Turkey in a Bag

I made this turkey exactly as stated except I also added some baby carrots inside the cavity along with the celery and onions. BE CAREFUL about the cooking time. My eleven pound turkey was done in 2-1/2 hrs. It was a little dry since I left it in an additional 15 minutes in hopes that it would brown some more. It didn't brown as much as I would have liked, but it made a nice broth for making gravy without all that butter. I will definitely make it again but take it out before it's overdone this time.

Beth's Spicy Oatmeal Raisin Cookies

OMG! I don't normally care for oatmeal raisin cookies but these were FANTASTIC with the following changes from other reviewers. I used 3/4 c. butter and 1/4 c. plain shortening, 1-1/2 teas. vanilla, 1-3/4 c. flour, 1/4 teas. cloves and threw in a handful of chopped walnuts. Can you say YUMMY????
