Coconut (Haupia) and Chocolate Pie

I hate to review recipes that I didn't try exactly, but I did tweak it after reading the reviews, and it turned out perfectly. I used more coconut milk in place of the water, and put all the coconut milk in the pan to boil. I mixed the cornstarch with the cow's milk, then added it as per the recipe. I used 3/4 cup chocolate chips, and mixed them with about 1/3 of the coconut mixture. It was REALLY yummy, the chocolate was not overpowering at all, and you could taste the coconut flavor.

Double-Cheese Eggs Benedict

Buttermilk Syrup

This syrup is heavenly! I never thought buttermilk could make such a yummy caramel sauce, but every time we make this syrup, it's a huge hit. Just beware of how it doubles or triples in bulk as it boils and use a large enough pan.

Eggless Eggnog

This recipe is pretty good when it's first made. I didn't add the rum flavoring, as it was for my children and I didn't feel it was necessary. Next time (yes, there might be a next time) I'll use cream in place of some of the milk. It's a little thin for eggnog, but the taste is definately there. The next day is was fairly thick and the good taste was pretty much gone. I was actually really disappointed.

Gingerbread Cookies

It's nice to find egg-free recipes, as my daughter is allergic. We made these today. Since I live in a dry, higher-altitude climate I only added 6 1/2 cups of flour, but it was too much for my KitchenAid mixer (never had that happen before!) and it was quite dry. Six cups would have been plenty. I added a fair amount of water until the dough would hold together, then refrigerated it. It rolled out quite well, and we had fun making 36 gingerbread men. I baked them 10 minutes and they're still soft. However, the taste is somewhat lacking. I hope adding icing and candy will help with that. Real butter instead of shortening might have helped as well. Overall, I don't know if I'll make this recipe again or not.

Maple Sausage Balls

This was really good. I used about 1 1/3 pounds regular sausage with 2 Tbsp. real maple syrup. I will be making these again! My kids couldn't eat them fast enough. ***Note: These are so much better with a butter-based biscuit mix!

Sausage Crescent Rolls

This was really easy and my husband and kids just gobbled it up! We ate 3/4 of it at dinner. I only used 6 ounces of Neufchatel (light cream cheese), and didn't let the sausage mixture cool. I laid out the crescent roll dough on the baking sheet, placed the sausage mixture in the middle, then brought the sides up and overlapped the top. It cooked beautifully this way. I also omitted the egg (we have an allergy) and poppy seeds. I ended up cooking it at 375 for about 15 minutes. It would probably be really good with spinach in the sausage mixture!

Pumpkin Pancakes

I think the consistency of the batter depends on how runny your pumpkin is. An off-brand I have is really runny pumpkin, but Libby's is really thick. That said, I made this with Ener-G egg replacer and used the equivalent of two eggs and just a little bit more milk. My kids LOVED having this for breakfast on Thanksgiving day. My husband and I also enjoyed them. We had them with real maple syrup. They were more filling than normal pancakes and we ended up with about half of them leftover. It made about 20 pancakes using a 1/4 cup scoop.

Pumpkin Cream Pie

Simple and easy. I loved this recipe. I had a box of french vanilla pudding and a box of french vanilla sugar free pudding that I used. I also used sweetened whipped cream instead of the frozen stuff. It was a big hit and I will be making it again.

Italian Dressing Mix

This makes the BEST pasta salad! The second batch I made, I used some garlic powder instead of garlic salt, as the dressing itself is quite salty, and omitted the celery salt, as I didn't have any. I'll definately make this again. Then tonight I put it on some hot spaghetti noodles and added olives and Parmesan cheese and it was excellent again.

Saucy Beef and Vegetable Casserole

The zucchini's optional. It tasted great with or without it. I've made it with ground turkey and it's great that way, too. Also, if the biscuit topping is too thick to spread, just add some more milk. Cook until bisuit topping is cooked through. I hope you enjoy this recipe.

Layered Patchwork Soup Mix

I made this for dinner tonight. It serves way more than two--probably about six. I sauteed the onion in olive oil, then added the water, peas, lentils, barley, and rice. Then stirred in all seasonings except for the salt. It cooked in about 30 minutes, then I stirred in 6 chicken bouillon cubes and the salt. Only four stars because it needed something more as far as seasonings go. It has a chewy texture, due to the rice and barley, not a mushy one like I expected. I like it and will make it again. It's a great way to get fiber and protein, and the grains and legumes make a complete protein!

Orange Cream Fruit Salad

Only four stars because it needs the modifications. I read the reviews and made this recipe a year ago and it was EXCELLENT. The orange flavor was really, really good. I used and extra can or two of fruit and drained the fruit in a colander (but only for about 10-15 minures). I'm definately going to make this one again soon. It's been too long!

Individual Lime Cheesecakes

This recipe was EXCELLENT. My husband said it's definately a keeper and my two little girls each had seconds. I made some significant changes: I had made homemade cottage cheese yesterday (dry milk, water, lemon juice) which was somewhat tart, but it worked great in the recipe. I mixed all the ingredients in my blender. After adding the sugar it was too thick to mix, so I used the amount of water called for in my egg replacer, then added the remaining ingredients--zesting an entire lime and using the juice of one whole lime. I added the vanilla and Ener-G egg replacer powder at the very end. Then poured it over graham cracker pieces. They turned out VERY well. My daughter is allergic to eggs and I was so glad this turned out with egg replacer. We served it with the yogurt but didn't have any kiwi fruit.

Easy Bake Brisket

I had a smaller brisket (under 3 pounds) so I omitted the tomatoes but added a can of green chiles. It turned out really well--my whole family liked it. The next day I cut the leftover brisket into small pieces and mixed it into the remaining sauce with a can of cut tomatoes. Then I cooked up some rice to serve it over. It was really good.

Waffles I

These were a hit! My young kids absolutely loved them. I doubled the sugar, but it probably wasn't necessary--although I really liked the slightly sweeter waffle. Next time I'll make this recipe with whole wheat flour. (We use Ener-G egg replacer due to an egg allergy.)

Easy Lasagna I

This was a good recipe, but NEEDS some modifications. When I made it, I didn't have cottage cheese, so I omitted it and only used 2 cups of ricotta cheese. I used two 15-ounce cans of tomato sauce and seasoning in place of the prepared sauce, then added in about 3/4 cup water. I only had enough cheese mixture and sauce for two layers of lasagne pasta, leaving extra unused noodles, but it filled my 9.5x13.5 pan to the top. It was good I didn't use cottage cheese too, or it wouldn't have come out evenly. Next time I'll use the cottage cheese too, add an extra can of tomato sauce, and probably use a 10x15 pan. (I used Ener-G egg replacer in place of the eggs.)
