Sausage Balls

These are amazingly easy and delicious. I made them for brunch with friends last weekend, and it reminded me of Christmas. Like the recipe-submitter, these were also a Christmas morning tradition in my house growing up. Maybe they will be again!

Herbed New Potatoes

These were amazing, and are very forgiving when it comes to tweaks. My husband got red potatoes, not new potatoes, and they were cooked too long so when we tossed them with the butter/sour cream mixture they fell apart and became a cross between mashed and regular potatoes. However, they were still DELICIOUS and WONDERFUL. WIN!!!

Soft Chocolate Cookies

Made these for a Christmas cookie exchange and they were amazing! Instead of confectioners sugar, I topped each one with an unwrapped andes mint immediately after pulling them out of the oven, and after 5 minutes I smeared the melted chocolate over the top of the cookie, swirling the white mint part. DELICIOUS.

Goat Cheese and Arugula over Penne

Really loved the goat cheese in this. Roasted the tomatoes with garlic before using them, and had it with rosemary/olive oil bread. Delicious!

Salsa Chicken

THIS WAS AMAZING. I found it while looking for low calorie dinners, and this was perfect. This chicken, the Best Spanish Rice recipe, and tortilla chips makes for a meal less than 500 calories! Rock!

Chinese Chicken Fried Rice I

This wasn't awful, but it didn't wow me either. I'm new to fried rice, so I think because the recipe said "Add rice, stir, heat through" that I didn't "Fry" the rice sufficiently. I'm still giving it a 3 because if that was the case, the instructions weren't clear. Still, it was easy and good, just not what I expected by the recipe title "fried rice".

Aunt Teen's Creamy Chocolate Fudge

I followed the recipe for this EXACTLY and my fudge turned out horribly. It got hard and crumbly and grease seeped up out of it. I tried to sop it up with a paper towel, but after I put it in the fridge more seeped up and congealed. I had thought with 1371 reviews and 4.5 stars I would be fine, but the problem is mine: I should have read more of the bad reviews to dodge potential issues. I think the major problem was that I added the chocolate chips all at once, and tried to stir by hand instead of using my stand mixer. Those of you who made this and made it work, I salute you. After this recipe bombed, I had enough marshmallow creme to try again with the recipe on the side of the jar, and it turned out perfectly. Sorry, Aunt Teen. I think your fudge recipe just isn't for me.

Chicken Enchiladas

I had to sub salsa for enchilada sauce (forgot to pick up sauce!) and you couldn't even tell. I put the leftover filling over the top of the enchiladas and omitted the olives. This was easy and delicious!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

This was excellent (and RICH!) I used fresh baby spinach (Wilted in the pan I fried the bacon in) and used feta instead of blue cheese (it was what i had on hand). I also didn't fry it before baking, and I seasoned the outside of the chicken with garlic powder and seasoning salt. Delicious!!!

Peach Pie

Delicious! I used two bags of frozen peaches (run under water beforehand to thaw, I didn't know if you could just bake them frozen but I didn't want to risk it). I also used half brown sugar, half white, and threw in a tbsp of cornstarch. And now that I think about it, I forgot the butter completely! But it was delicious, didn't notice the lack at all!

Harvest Salad

Delicious!!! I took this to dinner with friends and it was a hit. My changes: left out the tomatoes (we don't care for them); used a bag of Spring Mix salad instead of the spinach, I didn't toast the walnuts (didn't notice anything amiss). I also used seedless jam (all I had onhand) and olive oil instead of walnut oil. THIS WAS WONDERFUL!!!

Chicken Pesto Pizza

This was a great change from standard pizza night! I used Valentinos Pizza Crust from this website, but I didn't wait for it to bake all the way through since I normally don't prebake the crust - BIG mistake! trust the prebaked note on this recipe. I also used more cheese and less chicken, and I used an Italian blend. Will be adding this to our regular recipe rotation!

The Best Rolled Sugar Cookies

Made these for a cookie exchange, and they were very good. I upped the sugar by half a cup, did 1/2 c Margarine (out of butter) and 1/2 c shortening (to prevent spreading); and added 1 tsp butter flavoring. I rolled them out to about 1/4" and they ended up being crunchy, which was ok with me. Thanks!

Bacon Cheese Frittata

This was a big hit at our brunch. We doubled the amount of bacon, but we'll use a smaller baking dish next time. It was spread REALLY thinly in a 9 X 13 pan (I know the recipe calls for 11 x 7 but we didn't have that)

Double Layer Pumpkin Pie

This was a nice, quick recipe to take to Thanksgiving dinner. I found it made a LOT of filling, I threw away probably a third of the cream cheese and the pumpkin mixture each, which makes me think I could have filled 2 pie shells rather than just one (just made smaller pies).
