Apple Crisp II
CHANGES: Used 1/2 the amount of white and brown sugar and cut the butter to 6 Tbsp. Also used instant multigrain hot cereal packs (Quaker Simple Harvest) instead of oats. REVIEW: Based on the changes, I loved this recipe. We eat much less sugar in our diet and it was still very sweet (especially when you add some butter pecan ice cream). I really liked the water, sugar, cornstarch, vanilla sauce. That really made the recipe come together. Next time, I will try even less sugar.

I really enjoyed this dish. It really depends on how good the BBQ sauce is (I used the Big Al's KC BBQ sauce found on this site). Delicious! The only thing that would make this better is frying the tofu rather only baking it.

Easy Mashed Potato and Roasted Vegetable Enchiladas
The enchiladas looked and smelled amazing, but the taste was not as good as I expected. They have a strong vegetable flavor because of the choice of ingredients. It might be better with roasted peppers, corn, beans, etc. and go with a traditional mix. That said, I still gave this recipe a 4 star rating because when I topped it with jalapeƱos, shredded lettuce, and salsa - I did enjoy it.
