Peanut Butter Bars I

Very good!! I used 1 1/2 sticks of butter and had to use a smaller pan so they took a bit longer to set up. I also melted the peanut butter into the butter which made my life simpler. I wish I would have cut them before they totally set up though because the chocolate keeps breaking away from the peanut butter. But the flavors were spot on, and VERY VERY easy to make!

Cajun Chicken Pasta

My only complaint was that the sauce didn't thicken as much as I would have liked. I let it sit after cooking, but to no avail and I used less cream than called for. The only other change I made was that I used leftover grilled chicken from the night before and just sliced it up and threw it in after the veggies had cooked down some. It was very good otherwise and I'd give it 4.5 stars if I could!!

Broccoli and Tortellini Salad

I cut the recipe in half, and didn't use bacon or raisins because I had neither on hand. I cut the recipe in half but not the dressing, put it all together and put it in the fridge for about 45 minutes before dinner. Even with a short marinating time, the flavors blended well, but I can see how it could taste even better the longer it sits. I didn't miss the bacon, and I am a bacon lover! I'll make it again for sure because it was so simple to throw together.

Creamy Hot Chocolate

Very good. I used half milk and half water. If you don't use enough, it will be much too rich! I started with 4 cups (2 cups milk and 2 cups water) and added more until it mellowed enough for our tastes. A perfect thing for a cold evening.

Spice Balls

Very good! A couple things: 1. I didn't have mace, so I used pumpkin pie spice. Next time, I'll add more spice, because I just didn't get that much of a flavor. 2. Like other reviewers said, make sure to make them small otherwise they will not cook all the way through. Overall, a very good recipe, but it's still not "THE" recipe. I'm still on the hunt, but for now, this one is the best one I've tried.

Banana Crumb Muffins

These were a HUGE hit in our house! They were moist and had an excellent Banana flavor. I followed the recipe except for one change - I used oil instead of butter as other reviewers suggested. I made 12 large muffins...very easy, quick recipe! Thanks

Iced Coffee

AWESOME! It was great. I used a bit less milk than it called for because I'm not a fan of things overly sweet. I used leftover coffee, and this is my new treat! I can finally save money at Starbucks now that I have found a perfect substitution!

Slow Cooker Chicken Taco Soup

This soup was a HUGE hit for our family! It was very easy to prepare and it had great flavor. The only change I made was that I added regular diced tomatoes and a can of diced green chili's.

Broccoli with Garlic Butter and Cashews

Excellent! I even got my 9 year old to eat the broccoli and that's a first. It was very good, a nice change from plain old steamed veggies. If you don't like a lot of salt, I would drop the soy sauce a bit, but we loved it as is.

Chili Cumin Stuffed Chicken Breasts

I thought this was a very simple, and very good recipe. I made a couple of changes - #1 - I used boneless skinless chicken thighs and it was done in about 2 hours, not 3. #2 - Since I was in a hurry, I did not make rolls of them, but instead laid the chicken on the bottom of the crockpot and then poured everything on top and just let it cook that way. I didn't give it a 5 because, for me it could have used a bit of a punch, maybe some pepper flakes or something else to spice it up a bit. Overall, very simple, very quick and will make again!

Black Bean And Corn Salad II

EXCELLENT!! I made this exactly how the recipe stated and it turned out great! It does make a lot, but it'll definitely get eaten. This is great plain, or I put it in a pita for a full lunch.

Chocolate Eclair Dessert

A HUGE hit in this family! For me, it was not as rich as a chocolate eclair (a good thing!!) and had great flavor. I didn't make any changes and will definitely make this again.

Marbled Pumpkin Cheesecake

YUMM!! The cheesecake itself was delicious, but I didn't care for the crust. Next time I make this dish I will use a different crust, but the cheesecake was a big hit at Thanksgiving dinner.

Chocolate Banana Pie

AWESOME!! I left out the pecans as a lot of our family does not care for them...and I added sliced almonds on top of the pie. The only thing I would change is that next time I would not add the whipped cream on top until right before serving it. It was a HUGE HIT at our Thanksgiving dinner and was the first pie gone!!
