So, did I mention that I have a food booth as well? Yes the title is the name of the business. I had an old retro t-shirt that was advertising for a mythical BBQ joint called "Queenie's".  Loved the name ever since! Got a license from the State and started hitting the events last summer. From The Blog:  Wednesday Night Dinners
My newest Grandson, Jackson 01/02/09
About this Cook
I'm a self taught cook because I started getting home from work before my wife. We have four beautiful girls, three of which are married. We have seven beautiful grand babies that we adore! We have a 14 year old (yes, same marriage!) living at home. I have fallen in love with cooking!
My favorite things to cook
Anything Italian and anything on the grill. We recently started a ministry at church where we cook dinner every Wednesday night for about 150 people. It's a blast!!
My favorite family cooking traditions
Fondues on Christmas Eve, and a smorgasbord brunch at Thanksgiving
My cooking triumphs
People actually ask me to cook now!!
My cooking tragedies
I haven't had any dishes end up in the trash yet. I don't know what that says about the people I feed!!!

Broiled Tilapia Parmesan
Another winner! I had six fillets I wanted to cook, so I used this recipe and Grilled Tilapia with Mango Salsa also from this site. I did three fillets under each recipe and had them side by side. The cheese spread for this was very tasty. I should have left it longer under the broiler to brown it and get kind of a crust on the fish. I don't like fish, but this makes it actually taste good!! Nice job Phoebe!

Grilled Tilapia with Mango Salsa
Absolutely fantastic! I can't begin to tell you what a hit this was. I don't like fish, but this really was the best combination of flavors in my mouth. I didn't grill the fish (live in Minnesota) so I put the fish under the broiler 3-4 minutes per side. The mango salsa is what makes this dish. The combination of sweet and hot and peppery was out of this world. If you're having fish tonight, this is a must!! Thanks for posting Witzken!!

Mini Crescent Dogs
I've made these twice now, and they don't even get cold before they're all gone!! Easy and quick to make! Great appetizer!!
