Crispy Orange Beef
Prepared this recipe last night and we enjoyed it. It was not too sweet and definitely tasty. I do think the coating benefits from the addition of egg white with the cornstarch for crispness of the final product, which is how I usually prepare it. Chinese Orange Beef is a Szechwan dish which we prefer to be more spicy hot. That is not meant to deter someone else from trying this dish. Not everyone likes 'hot' dishes.

Ricotta Cheese Pie I
First let me say we like Ricotta cheese, but this pie is best left unmade. I found it basicly sweet w/o much flavor. My husband did not like it either. Use your time and ingredients for a more worthwhile dessert.

Salmon with Fruit Salsa
My husband said I should always make the salmon like this. The salsa is very good on the salmon and would probably be good on chicken or pork, which I will try in the future for variety. With the leftover salsa I found myself putting it on a ritz cracker as a snack.
