Grilled Salmon II
This recipe is fantastic! So flavourful! I omitted the peanut oil, and salt, and used chili paste (about 2-3tsp.) instead of the red pepper flakes, but otherwise followed the recipe. It was raining, so we couldn't barbecue, but it turned out beautifully using the grill functon in the oven. Oh, and I saved the marinade, added some water, and boiled it to make a sauce (though the fish doesn't really need it). Thanks for a wonderful recipe that will be made for many occasions!

Oatmeal Blueberry Muffins
This makes a nice moist, light but hearty muffin. I used about 1 1/2 cups of frozen blueberries (didn't even thaw them and they turned out fine). I also used only 1/8 cup of oil and replaced the other 1/8 a cup of oil with yogurt. Oh, and I added about a Tbsp of dried candied ginger. This gives a nice contrast with the sweetness of the blueberries. A great recipe. Thanks!

Pumpkin Cranberry Bread
This recipe is fantastic! I made some modifications though...Used half whole wheat flour and half white, only used a 1/2 cup of sugar ( lots of natural sugar in the pumpkin and dried cranberries), and used only 1/4 cup of oil and replaced the other 1/4 cup with yogurt. Oh, and these are good with raisins if you don't have cranberries. Thanks for sharing this delicous recipe with us!
