Spaghetti Carbonara II
Ingredients are fine. The preparation was less desirable. Adding the cooked pasta to the pan to heat through so the eggs can be cooked has a side affect of making the noodles overcooked and the dish drier that desired.
A better approach is to add the eggs and cheese to a large bowl, and pour in the pasta, fresh from being drained and mix. The eggs cook with with the heat from the still hot noodles. Then add cooked bacon/onion mixture and combine.
