Apple Puff Pancake
I've been making this for years and my family loves it. I looked it up at Allrecipes today to find out how to scale it upward. I modify this way -- I slice the apples and toss them with 1/4 tsp allspice and the cinnamon. Then heat the butter in the oven to melt, then add the apple slices and heat apples until they sizzle. Then I add the batter and and top with brown sugar and bake at 425 for 20 mins. DELISH!!

Six Can Chicken Tortilla Soup
I've been making this recipe for years, however just recently perfected it. I wanted to share it - I use rotiserrie chicken (the whole chicken), add 3 T lemon juice and about 3 T taco seasoning (like from an envelope or bulk in a bottle). Generic black beans work but what is really good are the Kuner's different varieties of black beans. Oh so good.

Cranberry Oat Bread
We live in Colorado and making bread in this altitude in the bread machine is not easy. So I've not made bread for years. Lately inspired with the Craisins I had on hand I made this recipe. It was ABSOLUTELY delicious and turned out perfectly. Following Allrecipes suggestions for making bread in the altitude I reduced the yeast to 1 T and increased the water by about an ounce. Turned out perfect and more importantly - soooo good. A real winner!
