these are SO good! i made a few changes, too: i use the graham cracker crust I recipe from this site, and i use muffin-size foil baking cups, so i can make a bunch and bake them right on a cookie sheet for 15-20 minutes. one recipe yields about a dozen cheesecakes, perfect for one serving per person. (or all for me!)
i make different toppings to serve on the side instead of the cherry pie filling: chocolate sauce, fresh berries, crushed candy, etc. they all disappear rather fast! thanks for a GREAT idea!
