Pasta and White Beans Gratin

This was wonderful! I cut the basil amount in half, and added a little liquid into the simmering beans. The overall mixture of flavour and texture was hearty and enjoyable!!! Thanks for a GREAT recipe!

Butternut Squash Pizzas with Rosemary

wow - what a unique and tasty pizza! i used trader joe's cornmeal pizza dough and added a little garlic salt and a dash of cayenne to the squash prior to roasting. also, i topped the pizzas with the cheese during the last 10 minutes of baking. my husband dislikes squash and loved these! thanks! (the squash is a bit of a beast to cut before roasting...any suggestions?)

Chocolate Cavity Maker Cake

wowee was this good! in fact, it was so good, i made it again the day after making the first one! (no, i did not eat the first one all by myself...) i followed it almost exactly, with the exception of using a half cup of espresso instead of liquer (less expensive, same result). i also drizzled melted semi-sweet chocolate chips over the top and sprinkled heath toffee baking bits over that. mmmmmmmmmm!

Spicy Italian Pork Cutlets

wow! EASY!! this was the first time i made pork - EVER. and everyone loved it! (funny thing is, i don't eat pork, so i never tasted it - haha! i did enjoy the tomatoes tossed with pasta, though.) i followed the recipe exactly, except i added a small onion to the garlic. i served it over al dente spaghetti tossed in olive oil and parsley with salad and rolls - what a great presentation! thanks for a great recipe!

Focaccia Bread

this was sooooo good! i made the dough in my bread machine, and just used parmesan and olive oil on the top, after i punched a few holes all over with the end of my wooden spoon...allows the oil to seep in and make it moist! thanks for an EASY and great recipe!

Salsa Chicken Rice Casserole

i took others' advice and sauteed rather than boiled the chicken and added garlic, salt, pepper and adobo seasoning. i also used a large can of crm. of chicken instead of two different soups, used half medium and half hot salsa and it was perfect! the leftovers are even better...especially when you add some black beans and corn, heat it thorougly and serve rolled up in homemade tortillas. thanks for a great and easy recipe!

Mini Cheesecakes I

these are SO good! i made a few changes, too: i use the graham cracker crust I recipe from this site, and i use muffin-size foil baking cups, so i can make a bunch and bake them right on a cookie sheet for 15-20 minutes. one recipe yields about a dozen cheesecakes, perfect for one serving per person. (or all for me!) i make different toppings to serve on the side instead of the cherry pie filling: chocolate sauce, fresh berries, crushed candy, etc. they all disappear rather fast! thanks for a GREAT idea!

Easy Key Lime Pie I

yep- really easy and REALLY tasty!!!! i also juiced the limes myself, took me about 7 of them to make 1/2 cup. it isn't green, of course, because of the egg yolks...but if you wanted, you could add some green food coloring. what a GREAT pie!!!

Insanely Easy Vegetarian Chili

woweee...we loved this! great seasoning blend (to which i added fresh basil, instead of dried)and great veggie combo! i omitted the mushrooms (bleeah!) and doubled the beans and corn. you can also add 1/2 lb. elbow macaroni and 2 extra cups water when you simmer the chili for 20 min. to make chili mac...also very tasty! thanks for a GREAT recipe! :)

we LOVE this salad...i always make it to accompany peanut butter noodles (from this site) or any other main asian dish. really tasty! it does not keep well the second day, so i always keep the oranges and dressing separate, and dish up as needed.

Pumpkin Crunch Cake

this one is "gooder than good"! i would recommend chilling it before serving...i am not a fan of hot pumpkin. and make sure you gently press the cake mix and nuts into the pumpkin mixture; the result will be a small layer of pie-like filling on the bottom and crunchy goodness on top! thanks for a GREAt recipe!

this soup is GREAT! the vinegar is an interesting and very important addition - don't leave it out! i like to mash the potatoes a bit right before serving to thicken it up even more...also, i add some cajun seasoning, garlic powder and pepper. very tasty!!!

Sour Cream Chicken Enchiladas

This is a fantastic dish! (i am eating it now for lunch again...mmmm!) Here's another idea: I made this as a "lasagne" instead of rolling each enchilada, and used small corn tortillas instead of flour tortillas. Try it - it's great! Place some of the sour cream mixture in the bottom of the baking dish, layer 6 corn tortillas on top of that, place half the chicken mixture in next, pour some more sour cream mixture over the chicken, then repeat. Thanks, Brenda, for submitting this one - my family and I will enjoy this at LEAST once a month! ;0) ~chanelle
