Rice with Almonds and Raisins

I leave out the raisins because I don't like them. This dish has loads of flavor even though it seems so simple. I make it in the rice cooker.

Cheesy Polenta

this is super delicious. I use more cheese (because this is Wisconsin, after all, the dairy state!) I have instant polenta, which only takes about 5 minutes to cook, so it's super quick.

Easy Olive Martini Chicken

I've made this three times and really enjoyed it. I double the sauce and thicken it with a bit of cornstarch & chicken stock. I still feel like it's missing something, seems a bit like a 'single note' of flavor. No idea what I would add though.

Would have been better if we hadn't accidentally used regular brandy instead of peach brandy. I thought it needed to be a little sweeter, but using the right ingredient probably helped.

I didn't add any breadcrumbs like the other reviewers did because we wanted this to be a low-carb recipe (as originally intended). All I did was add spices -- paprika, garlic, cayenne, and a lot of black pepper. I thought it was great!

These were a hit at our party. I read reviews and tried to ensure that I kneeded long enough. We turned them into nuggets but I forgot about the butter. They were still very popular. No leftovers.

Fire Roasted Tomato and Feta Pasta with Shrimp

This recipe was surprisingly delicious for such a simple recipe. I agree with the other reviews, this dish turns out like restaurant quality. My husband and I ate this for dinner one night and then each had a lunch-sized serving the next day. Our grocery store didn't have regular fire-roasted tomatoes so I used a can of fire-roasted tomatoes with green chiles that I already had. Made for a very spciy version, I think I'd rather stick with regular tomatoes.

Vegetable Quiche Cups to Go

I used broccoli, bell peppers and garlic. No onion because I didn't have any. It would be helpful to know how much of the raw egg mixture counts as a single cup so I know I'm making them the right size.

I try to make this for every party. I mix red & green grapes for this recipe. If you make this the day before, I've learned to not add the pecans until you're ready because they don't stay crisp/firm.

Slow Cooker Chicken and Dumplings

I added a can of mixed veggies (vege-all corn, carrots, etc.). Was disappointed because the biscuits didn't cook well, they were gloppy in our bowl. Next time I think I'll bake them in the oven and just serve the chicken stuff over them.

Greek Penne and Chicken

DH and I both loved this. Used only 12 oz of pasta. I added a can of black olives, although something like kalamata would probably be more authentic. tip: it gets dry as leftovers, so when reheating add a dash of lemon juice, olive oil and a couple tablespoons of water. Shake it all around in the storage container to make it saucy again.

Classic Spanish Sangria

I used lemonade instead of orange juice because I wouldn't drink any leftover orange juice. I also used only 2 of the 3 fruits listed because my pitcher was already full with those two. I really liked the recommendations of using blackberry merlot, but I suppose a real wine drinker would prefer something less sweet.

Stuffed Pepper Soup I

This soup was a bit bland and could use some more spices, but cozy and homey. Made it with only half the amount of meat and without brown sugar and soy sauce and used brown rice instead of white.

Slow Cooker Chicken Taco Soup

My husband and I both loved this dish. We made it minus corn and one of the cans of tomatoes with green chilies was spicy. I don't like beer at all, but I thought it really complimented the spiciness.
