Authentic Enchiladas Verdes

I didn't follow the recipe exactly but the concept is awesome! I wasn't sure what to do with tomatillos, and this if fabulous!

Best Tuna Melt (New Jersey Diner Style)

lovely recipe, I've had melt sandwiches before but never made one at home, this was a great one. I left off the tomato since I didn't have any and switched out the rye bread for a sandwich thin and swiss for provelone. nex time I'll definitely try adding some tomato since it sounds nice.

Rach's Broccoli Casserole

I left out the eggs based on the other reviews and it was what I was aiming for. The onion was still kind of crunchy so next time I would pre-cook that before throwing everything together. We prefer our veggies a little softer, so I might cook it longer or find another method to soften them up first before baking.

Applesauce French Toast

I made half a batch for my husband and I, I think it would have coated 5 slices of bread but we only needed 4. I used the extra applesauce as a topping along with a little bit of syrup, I really liked that.

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

I loved how quickly this soup came together! I was lazy and used a 16 oz bag of frozen cauliflower and a 13 oz bag of frozen broccoli instead of fresh. I also added a dash of chopped garlic and skipped the boullion. I pureed it using my immersion blender, leaving some larger chunks, and I didn't think it needed the thickener but I added it anyway. Great without cheese, but I'll try it topped with a handful tonight. I'm sure it can only make it better.

Breakfast Porridge

I like this recipe, it's a great quick porridge for some variety other than standard oatmeal. I didn't expect the ingredients to make a thick porridge, but it's great. I heat the water & fruit in the microwave for one minute and stir in the dry stuff. I skip the honey and I top mine with non-dairy creamer for a delicious sweetness.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

I didn't have any onion so I subbed in onion powder and used fresh spinach. Loved it! I wasn't able to taste the cumin so I'll increase that next time. I ate almost all of it myself. Will definitely be making it again many times.

Rice with Almonds and Raisins

I leave out the raisins because I don't like them. This dish has loads of flavor even though it seems so simple. I make it in the rice cooker.

Cheesy Polenta

this is super delicious. I use more cheese (because this is Wisconsin, after all, the dairy state!) I have instant polenta, which only takes about 5 minutes to cook, so it's super quick.

Easy Olive Martini Chicken

I've made this three times and really enjoyed it. I double the sauce and thicken it with a bit of cornstarch & chicken stock. I still feel like it's missing something, seems a bit like a 'single note' of flavor. No idea what I would add though.

Champagne Peach Punch

Would have been better if we hadn't accidentally used regular brandy instead of peach brandy. I thought it needed to be a little sweeter, but using the right ingredient probably helped.

Parmesan Chicken II

I didn't add any breadcrumbs like the other reviewers did because we wanted this to be a low-carb recipe (as originally intended). All I did was add spices -- paprika, garlic, cayenne, and a lot of black pepper. I thought it was great!

These were a hit at our party. I read reviews and tried to ensure that I kneeded long enough. We turned them into nuggets but I forgot about the butter. They were still very popular. No leftovers.

Fire Roasted Tomato and Feta Pasta with Shrimp

This recipe was surprisingly delicious for such a simple recipe. I agree with the other reviews, this dish turns out like restaurant quality. My husband and I ate this for dinner one night and then each had a lunch-sized serving the next day. Our grocery store didn't have regular fire-roasted tomatoes so I used a can of fire-roasted tomatoes with green chiles that I already had. Made for a very spciy version, I think I'd rather stick with regular tomatoes.

Vegetable Quiche Cups to Go

I used broccoli, bell peppers and garlic. No onion because I didn't have any. It would be helpful to know how much of the raw egg mixture counts as a single cup so I know I'm making them the right size.
