Kielbasa and Veggies

My mom picked up a bunch of polish sausage on sale, and pawned some off on me, so I was looking for new ways to cook it. I didn't have the frozen veggies, so I used fresh carrots and potatoes and onion along with frozen peas. Otherwise I stuck to the recipe. The kids weren't overly thrilled with the veggies, but they liked the sausage. My husband and I ate pretty full servings. This one's a keeper!

Sweet Polish Sausage

This was a HUGE hit! I skipped the hot pepper sauce, and used some steak sauce in addition to the Worcestershire (ran out). I turned it into a casserole of sorts, by peeling and slicing a few potatoes, cutting up the sausage, and mixing it all together in the casserole dish with the sauce. I baked it and served it that way. My husband couldn't stop eating it, and finished it off that night! He's not a picky eater, but he really commented on the flavor.

Aunt Jewel's Chicken Dressing Casserole

This was a big hit with my family. It's very similar to the Kraft one-dish chicken bake they feature on their stuffing boxes. I usually make that, but wanted a little variety. I ended up using 4 leg quarters I had, and added a couple boullion cubes, some rosemary, and 2 bay leaves to the water while the chicken boiled. Pulled the skin off the chicken, and the chicken off the bone, and spread it in the pan. I skipped the butter, since there was some grease in the broth. Oh, used 2 packages of stuffing mix, too. But it came out great! My family all enjoyed it (even my 3 year old cleaned her plate), and for the first time in a while, we were able to enjoy dinner at the table together. Hubby even took leftovers to work for lunch today.

Best Bread Machine Bread

I just discovered this recipe yesterday, and am now making my 3rd loaf. It tastes INCREDIBLE. I, like others, have issues with it collapsing, but it still tastes great. When my husband got home last night, he started devouring the loaf I had done. I now am on a mission to figure out how to get it to stop collapsing (I'll report back once I figure out where the problem lies). My machine is a Welbilt ABM4900. In any case, the bread is wonderful, it's so easy to make I've already memorized the recipe, and I may stop buying bread, and just invest in the flour etc. so I can make a fresh loaf of this every day (I can even get it ready the night before when I get the coffee machine, etc. prepped for morning use and set the timer so it's done for breakfast). *update* I made a loaf yesterday with bread flour instead of all-purpose flour, and it came out PERFECT! Hit the top of the machine. My husband used a slice for his hot dog, loved it. I used it for french toast this morning, and it was fantastic! Now we'll be having this fresh daily - no more store-bought bread here!

Easy Caramelized Onion Pork Chops

I really like this recipe, but I actually prefer to, as others have done, double the onions, and after the pork chops are done, remove them, then caramelize the onions with a bit of brown sugar. I also throw in a splash of vinegar at the end to give them a little more flavor. Turns out great, though!

Roast Beef and Yorkshire Pudding

I first made this for a picky friend who always had roast w/Yorkshire Pudding for Sunday dinner with his family. He loved it. My only change is to use either my pie plate or a 9X9 baking dish to make the pudding in. My pre-schoolers even like the pudding with the roast!

Artichoke Spinach Lasagna

I made this for an ultra-picky friend once, and need to make it again soon. It's a GREAT variation on the typical meat lasagna. My only changes were to use a home-made sauce, and I never boil my noodles first. I always use regular, dry noodles, and just make sure I've included enough sauce to boil the noodles as the lasagna cooks. The result is a lasagna that isn't runny and holds its shape well, without mushy noodles.

Slow Cooker Sweet Potato Casserole

Since I'm the only person between me and my sisters who like sweet potatoes, I was chosen to bring them when we made Thanksgiving dinner for our family (my dad's a big fan). I found this recipe, and loved the fact that it was really quick and easy to make. I make use of my slow-cooker as much as possible! I didn't change anything, and it was a big hit! There was almost nothing left for leftovers. I can't wait to see what my new in-laws think of it this year.

World's Best Lasagna

I've convinced 3 (now-ex) boyfriends, my husband, and even a couple Italian friends at school that I make the most incredible lasagna they've ever tasted with this recipe. I make it pretty much as shown, except if I have the time, I let the sauce simmer on the stove as long as possible. I also add a bit of whatever red wine I have on hand to the sauce. And I try to make a double recipe, so I can use the sauce for other things - it works wonderfully for Chicken Parmesan, plain ol' spaghetti, and anywhere else you'd use a red sauce. Everything tastes better the second day, too. Oh, one more thing - I never boil my noodles. I simply buy regular dried noodles, and make sure I have plenty of sauce in the lasagna. It cooks long enough that the noodles boil in the oven, and you end up with a lasagna that isn't runny and holds its shape well.

Asian Salmon

This was the first salmon dish my husband ever had. He didn't think he'd like fish. Right after we ate dinner, he had to call his parents and tell them how great it was! It's really easy to make (esp. since you bake in the marinating dish) and comes out wonderfully flavorful.

Apple Betty

This is a family favorite. I can make it very quickly using the apple peeler/corer/slicer that I have. My whole family thinks it's an extra special treat. And it's sooooo easy to make, and makes the house smell delicious. I generally use 1/2 brown and 1/2 white sugar, but last time I made it with just white sugar and it was still fantastic. I never measure the cinnamon or nutmeg, I just sprinkle it in until it seems right. But this is WONDERFUL!!! I haven't met anyone who doesn't like it! Great a-la-mode, too!

Charbroiled Salmon

I made this for my husband who rarely ate fish before meeting me. We both gobbled it up. I used salmon filets instead of steaks, but no changes to the recipe... it was delicious!

Adrienne's Cucumber Salad

These were DELICIOUS! A neighbor pawned a few huge cucumbers from her garden off on my daughter, leaving me to figure out what to do with them. I took two of them to make this recipe. My only changes: I didn't peel the cucumbers at all. I also used about 1/3 rice vinegar, 1/3 balsamic vinegar, and 1/3 white vinegar (I was using up bottles of the first two). I prefer the taste of the other vinegars to the white. My 3 year old daughter loved the cucumbers as well! Next time, I'll probably throw some tomatoes in too.
