Chai Tea Mix

Loved this! Use McCormick's Chai Spice Blend rather than mixing up the spices myself, works wonderfully. My kids even like drinking it in place of hot cocoa.

Sweet and Sour Chicken I

Amazing as is. Only change I made - double the sauce and omit the food coloring. I also add onion to the peppers. Yum. Love that I have the ingredients on-hand, too. So much cheaper (and probably healthier) than restaurant version!

President Ford's Braised Eye Round Steak

I was looking for a recipe for some cheap steaks I picked up, and found this one. I admit, the name caught my eye because I'm from Grand Rapids, same place President Ford grew up and was laid to rest. So I figured I'd give it a try. I'm glad I did! First of all, I love the prep - it's very simple. I could sprinkle the seasonings on the meat on the cutting board, and saved myself the hassle of having to dirty more dishes. I'm a huge fan of cooked onions, and found two onions to be perfectly appropriate. I did let them cook a bit longer than 5 minutes. I used Merlot in place of Burgundy, and 2 cubes beef boullion dissolved in 1 cup water in place of the consomme (because that's what I had on hand). Still close enough to the original. I also left them to simmer a bit longer than it stated, just because I knew my meat was pretty tough in the first place. I took the first bite and almost melted. The beef WAS fork-tender! Delicious flavor all the way through. I removed the meat and onions, and added some cornstarch that I'd whisked into cold water, brought the liquids back to a simmer, and ended up with DIVINE gravy. All in all, an excellent meal that brought back fond memories of my childhood.

Apple Pie I

I baked two pies using this recipe as written. Used Pillsbury Refridgerated Pie Crusts and Ida Red apples. Took them to a birthday party and got rave reviews from everyone! My sister had more the next day and had to call me to tell me just how wonderful it was. PERFECT recipe for apple pie! Pure and simple. I'm baking another now, using apple pie spice instead of just cinnamon. Yum! Great with ice cream on top too, of course. I also found I had no need to cover the edges of the pie with foil for some reason. I'm not sure if it's the crust I used, or because I turned the oven down to 325 and just let it bake a bit longer. Either way, we were quite happy. And to make sure your bottom crusts are totally done... use a pyrex pie plate, so you can take the pie out and LOOK at the bottom to check for browning. Works every time!

Pork Tenderloin with Creamy Herb Sauce

This turned out pretty good, but something seemed like it was missing flavor-wise. It was eaten by kids ages 2-19, so that's a plus! I doubled the gravy to make sure there was enough to pour over the rice.

Oven Fried Chicken II

This worked out GREAT. I followed the recipe with very few changes (nothing to change the overall recipe though). I used leg quarters, cut. I sprinkled some Gram Masala spices into the flour and the bread crumbs. I also used butter instead of oil. I put 1/2c salted butter in my big pyrex baking dish, let it melt in the oven, then put the chicken in the pan. I cut up another 1/2c salted butter and put it around the chicken. I wasn't aiming for a healthier version of fried chicken, I just didn't feel like standing over a fry pan for an hour while cooking for my family. :) So with that much to fry in, it gave it a very fried-chicken flavor. The kids decided it tasted a lot like KFC and ate VERY well. I'll use this to fry chicken again! Right now, I'm off to eat the leftovers.

Hot Artichoke and Spinach Dip II

This was pretty durned good. I'd give 5 stars, but I ended up using sour cream instead of mayo, mixing 1/2 mozzarella in with the other stuffs, and adding garlic powder. It was delicious that way. Great base for a yummy dip! My 2 and 4 year olds loved it too.

Crowned Beef Bake

I made this last night, only change was that I added a package of onion soup mix (didn't have french fried onions). It tasted okay, but the biscuits were very brown on top and gooey on bottom (didn't cook through). The kids wouldn't eat it. Not sure *why* they didn't cook through... Next time might skip the crown part and lay flat on top or something... seems as though it might cook better that way...

Artichoke Hummus

YUM! I just used a whole jar of quartered artichokes and a can of garbanzo beans (drained) plus other ing. as listed - ran it through the food processer until it was really smooth. Goes great with veggies! It just might help me get back on track with my diet - it kinda helps with the salty food cravings w/o resorting to chips.

Italian Spaghetti Sauce with Meatballs

I didn't make the sauce, just used jars of sauce. But I used the meatball recipe with some ground venison and it was a BIG hit! My kids loved it, and my husband (who has not been a big fan of venison) even ate a good share of it. I made this in the crock pot and let it simmer all day. Yum!

Easy Taco Casserole

This one was rated "absolutely fantastic" by my 6 and 8 year old children. I just used a taco seasoning packet with the ground beef instead of the salsa etc. because my children wouldn't have liked the salsa. I may try it that way next time. But it was great, and all kids (ages 1-8) loved it!

Baked Chicken Nuggets

Wow. These were amazing. My kids, who NEVER like my homemade nuggets, chowed down. Only change I made to the recipe was to use plain bread crumbs with Italian seasoning and skipped the extra seasonings.

Chicken Eileen

I was looking for a different way to use chicken, cheese, and stuffing, and this fit the bill perfectly! My daughters (ages 6 and 3) had a blast helping me pound the chicken breasts. The only change I made was to use monteray jack cheese, because that's what I had on hand. I also topped the chicken with the slices before putting it in the oven (because I forgot to wait). It still turned out great! All the kids loved it. It actually turned out quite well and looked very pretty. My children were impressed, they said it was like eating at a nice restaurant.

Mashed Potato Miracle

I had to make a couple substitutions - I used onion powder instead of minced (my kids can detect the smallest onion piece) and I discovered that I didn't have the french fried onions, so I topped it with sliced Monteray Jack cheese. It worked out GREAT! all kids loved it and said they want it again. Leftovers for lunch today were yummy, too. I can't wait to try it with the cheddar fried onions next time! Oh, I used evaporated milk, too.

Snappy Green Beans

I made this as part of a "steakhouse at home" dinner. It went over really well, tasted great! Served with a nice steak and the honey-topped sweet potato on this site, it was just like something I'd get at a restaurant.

Hot Chocolate Mix I

This was decent for hot chocolate mix. Using the blender for it was really a pain, though. I think next time I'll just use powdered sugar to start with. The kids liked it, esp. with whipped topping on top. You really have to use your taste as a guide to how much to use in each cup.

Gordo's Good Venison

I made this last week for myself, and my 3yo daughter kept stealing pieces of my steak. It was wonderful! I wouldn't say it eliminates the "wild" taste of the meat so much as it complements it. The cumin really does the trick. I used leftover steak sliced really thin on quesadillas later. YUM! I was out of rosemary, substituted with marjoram. Otherwise, I followed the recipe exactly. Since winter finally hit Michigan, I ended up cooking the steaks under the broiler. I made sure to baste generously with the marinade. AMAZING recipe.
