Strawberry Summer Salad
This what a hit at a family party we went to. I used 1 bag of baby spinach and 1 bag of a lettuce/baby spinach mix and used the feta cheese (put it on last) that came with the salad mix. I only had 3/4 cup of mayo so I added a 1/4 cup of sour cream. I used 1/2 Tbsp. of white vinegar and 1/2 Tbsp. of raspberry vinegar. Everything else was the same except I didn't use a full Tbsp. of poppy seeds (just personal preference). Our niece and BIL said that it tasted just like a salad they had in Hawaii. Everyone said it was great and we took home NO leftovers. Important: So that it wasn't soggy, I took everything to the party separate and put the salad together right before serving. Also, didn't use all the dressing. I think if I had it would have been too much. FYI - April 11, 2009 - This salad was requested for me to bring to the family Easter Dinner tomorrow! Twice Baked Sweet Potatoes
My husband and I loved this. The kids didn't try it but that was expected. I have my favorite sweet potato casserole dish that I have at Thanksgiving and Christmas that is really sweet but have wanted one to have with an everyday meal. We had one yam and I rubbed the outside with oil and butter and then sprinkled kosher salt on the outside and cooked it in the oven per instructions. The skin DID fall apart but I didn't care since it was just us and I mixed (and I didn't measure anthing)everything else together and just spooned it on top of the broken skin and put it in the oven for 5-10 minutes and it was really good with our grilled chicken breast and steak. It was just slightly sweet so it didn't overpower the rest of the dinner. Loved the cream cheese in it and made it creamy and rich but didn't taste it. Thank you!! I'll be making this often!!

Taco Seasoning I
I don't review recipes very often because they really have to impress me. For years I've tried taco seasoning recipes, making my own, using a store bought packet and just throwing seasonings in to fit my taste. I prefer the restaurants that use a taco meat without a heavy "taco" flavor and do NOT like the ones with ketchup or taco sauce added to them. I'm very much a purist so less to me is better. So I tried this one expecting it to taste like a taco seasoning packet. I made the whole recipe and cooked 2 lbs. of hamburger meat and added the seasoning to taste along with some water to help mix. I kept tasting it as it was cooking and kept adding the seasoning and almost used the whole recipe. Husband and daughter (11 yrs.) loved it as a meat burrito, I had a crunchy taco and almost 14 yr. old son doesn't really like tacos so he added ketchup and made a sloppy joe and he loved it. I liked it too. It didn't have an overwhelming taco flavor. All the spices worked really well together and seemed to have a perfect balance so not any one spice was overpowering. Thanks for the recipe! I should use this from now on.
