About this Cook
My husband and I retired in 2001 and moved from the Portland, Oregon area to Hemet, CA, about half way between Palm Springs and San Diego. We love it here, especially the weather. More sunshine than we ever dreamed of. Portland is beautiful, but we don't miss the rain.
My favorite things to cook
I enjoy cooking almost everything, but believe in the KISS theory of keeping it simple...and healthy. I love trying new and interesting recipes and this site provides some of the best recipes ever!
My favorite family cooking traditions
My grandmother made the best sour cream cookies every Christmas. It was fun to "help" her when I was a child.
My cooking triumphs
My first true triumph was a cheesecake that I made for company. When I took it out of the oven I was sure it was a disaster, but somehow it came together and everyone raved about it.
My cooking tragedies
Macaroni and cheese with leftover turkey. It was so bad I tossed it out.

Herbed Broccoli Spears
This is a very nice way to fix broccoli with lots of flavor. Even my husband, who doesn't like broccoli, liked this. Thanks for sharing.

Parmesan Baked Potatoes
WOW! DELICIOUS! The only change I made was to add a little rosemary, thyme and "pizza grinder" to the butter and cheese. I've made this several times using whatever kind of potatoes I had on hand and each time they were great. By request, I've shared your recipe with several friends. Thanks for sharing your recipe with all of us.

Grilled Eggplant, Tomato and Goat Cheese
This is absolutely delicious! My husband and I both loved it. The only changes I made was to salt the slices and let them sit on paper towels about 30 minutes then pat dry. Then I marinated them in the olive oil & balsamic vinegar until I was ready to put the slices on the grill. I grilled one side 7-8 minutes then flipped over and added the goat cheese and tomato slices and grilled another 7-8 minutes. Also, I served them open-faced instead of sandwich style. Thanks so much for a really great recipe!
