Broccoli Tomato Salad

Just made this tonight. It was a great side dish for grilled steak. I did make some changes though; I used splenda instead of sugar (I can't have sugar), I used cucumber instead of mushrooms b/c I didn't have any on hand, and before I served it I sprinkled on some crumbled low fat feta cheese. Next time I'll omit the thyme since I'm not a big fan of the herb. Terrific addition to my recipe box.

Marinade for Steak I

YUM! Amazing flavor. I had some filet mignon that was a few days old and I decided to marinate just to be safe. Because it was filet I only marinated for 2 hours. We grilled them over charcoal. This is a new favorite.

Baked Macaroni and Cheese III

This completely satisfied my adult craving for a comfort food fix tonight. It's just enough cheese. Not gooey, not dry. The only thing I substituted was 1/4 tsp white pepper instead of the 1/2 tsp black pepper. The sour cream, as well as the parmesan, gave this dish a nice sharp offset to the cheddar. Way to go Daphanie!
