Elegant Fig Appetizers with Goat Cheese and Almonds

This was very easy and a really great combination of flavors and textures. I had 8 rather than 12 figs, and didn't alter the amounts of honey or balsamic. I went heavy on the herbed chevre (probably more like a solid teaspoon+), and used cashews, because we are not huge almond fans. My husband wanted to know if there were any more when he finished his, high praise indeed.

Cucumber Sandwich

This was so good. My husband, who is not a huge veggie fan, had seconds! Since I read several reviews that said it was messy, and that wheat bread fell apart, I tripled the recipe, and put it on a ciabatta (Italian "slipper" bread). The crust stood up really well, we loved it. I made this sandwich for lunch two more times with leftover ingredients that hadn't fit into the ciabatta. So yummy!

Slow Cooker Lasagna

A very good recipe. It makes enough to freeze half of it for another meal. I used jarred sauce (Classico spicy red pepper) instead of making it from scratch, and also used no-cook lasagna noodles (Barilla). I cut the time down to six hours. Otherwise, it would have been quite burnt. It was a little burnt on the edges as it was, but my family likes lasagna that way!

Cherry Pie III

This is the best cherry pie I have ever made! I only made a few changes: I doubled the fruit. Also, since my family does not like almond flavoring, I substituted brandy extract for almond extract. I have already made several of these, and plan to do so whenever fresh cherries are in season!

Tasty and fast, a great last minute meal! We usually serve it over a packaged flavored rice, since there is a not a lot of sauce created by this recipe.

Bananas Foster II

We love this recipe, and use it almost everytime we have leftover bananas. The other ingredients are ones we always have on hand, and it is a fast, elegant, and delicious dessert
