Simple Ranchy Breaded Fish Fillets

Fantastic Pumpkin Bars

Oh my gosh are these ever delicious. One of the best dessert recipes I've prepared in a long time. All my guests raved. So very very moist and flavorful. This is a real keeper. Only change was I used Fat Free Cream Cheese but no one could even tell.

Easy Salsa Meatloaf

I can't believe I'm giving Meatloaf 5 stars. I've had my favorite meatloaf recipe I've used for years but reading this it sounded interesting. What a wonderful new twist to meatloaf. LOVED IT! I added 1 jalapeno (seeded and diced) and added another 1/2 cup cheese a few minutes before it was done to melt on the top. Also - used pepperjack cheese instead of cheddar. Everyone really needs to try this meatloaf recipe.

Sugar Coated Pecans

Just like all other reviewers a definite "5" star. This is so easy and they are absolutely delicious. I took the suggestion of others and used 2 egg whites and added 1 tsp of vanilla. They are now sitting in an airtight container ready for future use. YUM!

Easy Chicken Fajita Soup

Delicious. So easy to make and very hearty. Next time I think I'll cut the peppers into bite size pieces though as it was a little difficult with these in strips. Be sure and add fresh avocado and some shdreded mexican blend cheese on top when you serve. PERECT!

Mayan Couscous

Absolutely wonderful. What a delicious change from rice or potatoes. I made this exactly as written and it turned out perfectly. we had it as a side with fish one night and what was left over I stuffed into Cornish Game Hens. FABULOUS!

Green Bean Stir-Fry

Great Great Recipe. I doubled the sauce as I like a lot of sauce. This is a fun way to make green beans. I'm going to try this on other veggies next time as well.

Taco Seasoning I

I will NEVER EVER buy taco seasoning again. This is absolutely delicious. I made a jar of this and it's now in with my other spices. This is a perfect blend and you just add according to your taste. Thank you Bill

Fierro Chicken

Really moist and flavorful. The chicken melted in your mouth. I agree with the others that this really didn't have enough kick. I used mild Enchilada sauce and next time will use hot, It makes a ton of sauce so we served this over rice.

Avocado, Tomato and Mango Salsa

WONDERFUL. What a wonderful - fresh salsa. I served this with AHI and it was fantastic. I can't imagine having fish without this salsa as an accompaniment. Didn't change a thing except reduced the salt to 1/2 tsp. I made this 2 hours ahead to let the flavors all set in as well.

Turkey Ragu with Fontina and Parmesan

GREAT-This is a wonderful cheesey casserole. I cut it in half and put it in an 8X8 baking dish and baked it a few minutes.I did add some add some red pepper flakes to give it a little bit of kick - it would be fairly bland otherwise. P.S. I used the full cup of Fontina for my half recipe. Soooooo good and cheesey.

Caribbean Zucchini Bread

WONDERFUL - even my picky husband who hates zucchini bread keeps coming back for another slice. The bananas and the coconut give it that extra special flavor. So very very very moist. This is a keeper.

Tomato Basil Penne Pasta

I was a little hesitant to try this but it was absolutely delicious and I gave it 5 stars. The only modification I made was that I used 3 tbl. regular olive oil and 1 tbl. dried basil. Very creamy and with just a slight kick due to the pepperjack cheese. It's like a new versions of mac and cheese. You won't be diappointed if you give this recipe a shot.

Marinated Grilled Shrimp

Absolutely delicious. I followed the recipe exacely except instead of putting the shrimp on skewers I used our BBQ Wok pan and just stir fried them for a few minutes until done. Can't wait to make this for company. Don't change ingredients. Perfect as is.
