I can't believe I'm giving Meatloaf 5 stars. I've had my favorite meatloaf recipe I've used for years but reading this it sounded interesting. What a wonderful new twist to meatloaf. LOVED IT! I added 1 jalapeno (seeded and diced) and added another 1/2 cup cheese a few minutes before it was done to melt on the top. Also - used pepperjack cheese instead of cheddar. Everyone really needs to try this meatloaf recipe.

Just like all other reviewers a definite "5" star. This is so easy and they are absolutely delicious. I took the suggestion of others and used 2 egg whites and added 1 tsp of vanilla. They are now sitting in an airtight container ready for future use. YUM!

Delicious. So easy to make and very hearty. Next time I think I'll cut the peppers into bite size pieces though as it was a little difficult with these in strips. Be sure and add fresh avocado and some shdreded mexican blend cheese on top when you serve. PERECT!
