This is a great tasting, moist, easy, and big cake that even my husband (who NEVER cooks) made with much success for his tennis club pot luck supper.I've tried other more complicated "from scratch" poppy seed cakes and this is better in addition to being quick. Already have made it several times.

I used dijon mustard and added a tablespoon of dillweed. Substituted the colby cheese (too mild for my tastes) with a mix of cheeses: 1 cup Extra Sharp orange cheddar, 3/4 cup monterey jack, and 3/4 cup mozerella. Topped with a mix of bread crumbs and parmesan.
